Dried plantain chips -- healthy RS starch
 
Not bad, just don't eat the whole bag at one sitting (45 carbs) First time I coated with olive oil and baked at 350*F for 15 min on a side, were OK but tough as a rawhide chew. This batch, no oil, slice diagonally, dry in convection toaster oven overnight on bake. Should hopefully turn out like the chips from Whole Paycheck :)
One ripe Plantain yields ~20 chips 45 net carbs or 14 / oz dried

Talked to a afriend today about resistant starch--- she has never heard of this. She is a lifelong type 1 diabetic that controls her blood glucose very well.

My wife's bg was higher this morning (she's been eating plantain chips the last couple days along with me - she has T2D). Going to have to cut back so she will too.

Fried some today that were almost ripe. Good, perhaps too good! Frying is better than baking or drying IMO but higher in calories.
Would put them in the class with sweet potato fries that I had to give up because they were so more-ish :devil:

My potato starch arrived today and I ordered some plain "Tiger Nuts" to experiment with next :)

Tried the frying with sliced yam or sweet potato. Don't bother. Unlike plantains they didn't come out crisp, but soggy. Same oil, even hotter temp and longer cooking time. Commercial sweet potato 'fries' are coated with starch and sugars to make em crisp up when deep fried or baked still frozen.

Plantain fries soon will get like a cold French fry if not served straight away :(

Perhaps all these test failures will make for some good dog treats? ^..^

My "Judees" potato starch was a huge bag 2.5 lb It mixes well with water, and has a hint of raw potato taste going down. No ill effects from it so far. Likely is feeding the kefir in my gut right now!

103 to 106 but I only had two test strips left so ill have to repeat again when fasted. Normally 87 -103 between meals.
