:help: I am starting a favorite recipe journal and was wondering if anyone wants to take part in donating their best recipe to me. I would really like some ideas on soup....I luv soup..... Thanks so much, Gina :yum:

I like the sweet peppers in it....... :agree: "they are found in a jar near the pickles"



fluffy 4 egg omelet with mild sweet peppers


4 eggs beaten

some butter in an omelet size pan

heat butter

pour eggs in and let cook on medium heat for a few minutes

sprinkle cheddar cheese over top

add a few onions "if desired"

cut mild pepper rings in small pieces

add those and flip omelet half way over, keep flipping and cook on low heat for 5-10 minutes.. :yum:

Cod cooked in olive oil :yum:


fresh cod fish

olive oil

cook cod in olive oil for 5 minutes turn over until done


mix mayo and sweet relish together for tartar sauce.


serve with a side of fresh steamed broccoli

I love LC pancakes which are soooooo easy to make, and tase soooo authentic:

Take 3oz cream cheese - full fat softened. Mix in three whole raw eggs. You have to mix it for a while because it sometimes turns out a bit lumpy.

Heat up a pan with butter in it - let the butter sizzle and then pour in tablespoons of the mixture (will make 8 small pancakes or 3 large ones) into the pan. let cook and bubble. And then gently flip over. They taste wonderful with splenda and butter on top or SF davinci syrup.

Hi Gina,

Currently I am on my LC pizza kick. I take a low carb tortilla, spread a little bit of olive oil on it, about little bit of tomato sauce (about a teaspoon for fajita size tortilla), some mozzarella cheese, and pepperoni. You can put whatever you want on it I suppose. I then put it on a cookie sheet into a 400 degree oven and bake until cheese is melted and bubbly. I actually do all this while it is on the cookie sheet. I don't fix it and then transport it like it sounds when i was re-reading it. It might be a little high in carbs for people who are on induction but if you are on maintenance.....it's a good lunch. I use the fajita size tortilla and I think it comes out to about 6 carbs. That is using regular tomato sauce. If you use LC tomato sauce, it might come out lower.

Low carb Quesadilla


Low carb tortilla shell

heat pan til pan is warm

you can use oil if you want, yet I never do

heat tortilla on low heat and add cheddar cheese, you can add chicken, beef, or any other fillings that are low carb a bit of tobasco or salsa is ok too. I sometimes just make cheese and salsa ones with sour cream. I just put a spec of salsa in it though.

*****when cheese is melted fold over then flip, continue to flip continuously til cheese is melted and it is light brown, or until cheese is melted and fillings are hot. serve with sour cream. :yum:

LC PIZZA

You'll need CARB DOWN wraps, you can get them at WalMart Deli counter. They are AWESOME, 8 net carbs for the whole thing and 15 g fiber!!

Ingredients:
CD wrap
olive oil
minced garlic
alfredo or LC tomato sauce
grated mozzerella
pepperoni
ANY veggies of your choice

Glaze CD wrap w/ olive oil and minced garlic, put in oven at 350 degrees for about 8 mins.

Remove from oven, add tomato or alfredo sauce, cheese, pepperoni and any other veggies or toppings of your choice.

Put back in the oven at 350 degrees for about 10 or 11 mins.

THIS IS SOOOOOOOOO GOOD...and the carb down wraps are so filling, i usually eat half in one sitting and the other half later, still LOW CARB (you'll have to calculate for yourself.

Pretty simple and may be common fare for a lot of people but I made my first roast ever.

About a 6 pound beef roast with nice marbeling. Browned on both sides in hot sesame oil. Put it in an iron skillet with three large sliced jalapenos, one large onion, a little fresh garlic, a bag of baby carrots. Spiced with salt, coarse ground black pepper and cumin. Cooked it for about 6 hours and then froze 5 ounce servings in ziplock bags. Just had one for lunch :D
