Batch #58 and this one fermented for 18.5 hours (compared to the last 48 batch that fermented for 48 hours!). Another smooth, creamy near perfect batch. Two in a row! No large whey layer on the bottom, but bubbles. I'm still learning.

The trials and tribulations of kefir lol.
Defrosted the kefrigerator. We've got a small fridge upstairs that I store my coffee cups of mixed kefir (w/chia seeds, instant coffee, and non-dutched cocoa powder). Got one for breakfast the other day and it was frozen solid. Broke up and melted ok and I turned down the setting. That's three batches in a row that were smooth and creamy, near perfect with very little curds after straining. This last one had some small bubbles at the bottom and a very small patch of whey. |
How is the kefir frozen??? Competition for frozen yogurt??

It took about a month for my kefir to get to the awesomely creamy stage. It was real yeasty and... weird at first. Now it's the bomb.
I'm off it today as I'm testing whether powdered swerve might be having some digestive effect on me. Might just be me drinking a boatload of it in sweet tea lately. :-) But normally I keep my kefir in the fridge in a big mason jar with a pop-up lid (this thing) and I just take 3-4 quick swallows throughout the day. Easy, clean, and I don't need to have tons of separate jars and/or do a messy pour job every time I want some. PJ |

Cooler temperatures = longer fermentation time. I write down my start / stop / total fermentation time and rate the outcome on the back of an envelope. I have my last 72 batches recorded - so I can look back to various seasons and see how long a good batch took.
I've been fermenting for 19 hours for 5 star batches - but in my learning curve I've found that I have to look at the bottom of the gallon ball jar and as soon as I see a bubble I know it's time to harvest ( shake, strain, pour / mix ( chia seeds, cocoa powder, instant coffee )into individual coffee cups ). Normal has been around 19 hours, and the batch before last didn't show the bubble but I harvested anyway and it was runny (still good to eat though!). The last batch took 26 hours plus before the bubble showed - 5 star batch! |
