Exchange rate from Splenda to Stevia?
 
I have done a search over and over and can't find an exchange rate from Splenda to Stevia, or any other sweetener to Stevia. I have never used liquid sweeteners before, and am worried I will ruin too many recipies before I figure it out. Thanks.

Unlike Splenda, stevia is an herb and is not available from just one company. So, I imagine it varies. I use only the liquid, non alcohol base mostly in drinks and in small recipes for myself - like the waffles or cream cheese danish. I just experimented with it.

I would only bake with it if I used a recipe designed for stevia - I'm not one to experiment with stuff like that (low patience!). I've eaten FABULOUS brownies sweetened with stevia, and I'm sure I'll make some once I'm off induction because I do prefer to use a more natural sweetener as much as possible.

The packets of stevia tend to lump up in cold drinks and need to be stored in an air tight (non humid) area or they will clump in packets.

So, that is the extent of my knowlege of stevia. Good luck in your cooking endeavors.

Thanks for the info, I guess I should have mentioned it is liquid stevia. I just read a post from Karen a while ago saying artificial sweeteners don't ad structure or bulk to recipies, so you could use liquid, powder, or pourable inplace of any sweetener in recipies.

From my copy of "Sugar-Free Cooking with Stevia" (The book the FDA wanted burned):

1 cup Sugar
1 cup Sucralose
24 packets Stevia Blend
12 tsp. Spoonable Stevia Blend
2.5 tsp. Stevia Extract Liquid
1.5 tsp. PURE Stevia Extract Powder

NOTE: Not all Stevia Extract Powders are pure. Look for a 28 mg serving size or thereabouts... If the serving size is significantly larger, the Stevia isn't pure.

Hmmm - I use "Sweet Leaf" brand of pure stevia powder (I get it at Whole Foods). The label says 1/3 teaspoon = 1 cup sugar (not 1 1/2 teaspoon as listed above). Although I do have the "Low Carb Cooking with Stevia" book that also lists the same (1 1/2) equivalents as above.

Too much stevia may taste bitter or licorice-like. For things where you can easliy add more (tea, Kool Aid, whipped cream, etc), start with less and taste - only add more if it needs it. After using it for awhile, you will get the hang of it.

I thought I was limited to buying stevia online.
But thx to that post of yours....I found the "Whole Foods"
website at www.wholefoods.com and found that they have stores
nearby. The store near me that carries it is called Bread & Circus.
I'll be making a trip there asap!

Hi, Stevia varies depending on the source. Some is very bitter (Puritan'sPride) Medicine Shoppes have a great one (their brand) and run specials by mailorder catalog. Packets are a blend (not pure stevia) and it is recommended that you buy the bulk size for cooking because this is more pure. I have purchased the plant at the farmers market and grown my own. I just add the leaves to my drinks - its great. Mary Laczkoskie

How many carbs??
 
My liquid stevia says 0 carbs for the few drops it suggests as a serving, but I usually use a whole dropper for my tea and two droppers for my coffee. What would the carb count be for those servings?
My stevia is Wisdom Herbs Sweet Leaf pure liquid stevia.

MoonDoggy, I am not an "authority" on stevia but from my years of doing homeopathy a dropper is usually only about 13 drops so, 26 drops in a serving may be about 1/4 teaspoon. Which may still be less than a gram. Hope this helps. Mary Laczkoskie

I love that you do homeopathy.
I am very into natural healing methods and utilize flower essences, chinese herbs, homeopathic remedies etc...
I just used a homeopathic remedy on my dogs just this weekend because they couldn't hold anything down.
I personally haven't had much luck with homeopathic remedies on myself though.

To convert splenda to stevia, I usually convert splenda back to sugar, then sugar to stevia.
