If you're looking to make it low carb, use Splenda or Stevia. If you're looking to make it Paleo, keep it as is. This is super yummy, filling, and hearty.

My mom used to make something similar .. with a bit of chopped cooked bacon and walnuts on top. I think she used Miracle Whip or something similarly sweet as a dressing :eek:

Do you have a nutrient count or at least the carbs per serving? .. that would be helpful for our readers. I realize this is a paleo recipe, but many folks here are following a low-carb program.

Bacon and Walnuts would be AWESOME.

Per MFP, this dish made with walnuts and stevia would be 13 net carbs for 1/8. With honey, it would be 16 net carbs. The calorie count is 160. Fat 12 g. Protein 2.

You could decrease the amount of carrots and apples to decrease carbs :)

thanks for the recipe- I have a similar one with a creamy dressing- uses mayo instead of the oil- I'm going to try this one.
