Chicken Nut Stew

2 Servings

I got this from my Cafe Beaujolais cookbook. With a little modification, I made it my own. It's a little high in carbs, but yummy!

4 chicken thighs
1/2 teaspoon salt
1 dash cayenne
1 tablespoon olive oil
2 cups chopped onions
2 tablespoons minced garlic
1 tablespoon tomato paste
1 cup chicken stock
1/2 cup peanut butter
3 Roma tomatoes, chopped

Skin the chicken thighs. You might also want to bone the thighs and cut them up or use boneless thighs, it's up to you. Season the chicken with the salt and cayenne. Saute the chicken, onions and garlic in the olive oil for about 15 minutes. This will make the onions and garlic quite brown.

Add all remaining ingredients except for the tomatoes, mix well and simmer for 15 to 20 minutes. Add the tomatoes and serve.
