Cream Cheese Rollups
 
Got this from one of my employees - she made them for a potluck and they are low carb! I make a double batch and take some to work in my lunches. They are salty, fyi (for people that don't like salt)!

1 Jar Hormel dried beef (found in canned meat section)
1 - 8 oz tub WHIPPED cream cheese
1 can diced green chilis

Mix cream cheese and chilis together. Spread into piece of dried beef and rollup! I have kept these in fridge for up to a week and a half. These are great for party finger foods....I have made these for baby showers!

To reduce the salt, try rinsing the beef slices in water and then drying on paper towels. If still too salty, let the slices sit in a fairly large amount of water before drying. You won't lose any flavor except salt.

I tried this before with turkey slices and it was kind of bland. I think I would like the canned meat for a change as well. I like salt now and then.

Helpful hint for those that like a bit of twang on this little tidbit.
my daughter who is a devout Low-Carb eater makes these roll-ups but adds a small slice sweet yellow pepper in the midst..they are addictive.

I make these using thin slices of Pastrimi - less salty than the dried beef, but still has that tang.

I've been doing this for years, but with Lebanon Bologna, the sweet and smokey flavors mix brilliantly. Another variant is to use olives instead of peppers in the roll-up.

That is really good!

Another one I like to make is with thinly sliced deli beef, coat with softened cream cheese, sprinkle with sliced green onions. Roll up and slice into little rounds like sushi.
