LC No-Bake Cookies (pics inside)
 
These are those yummy, ugly peanut butter cookies typically made with oats.
Here's my version:

Lc No-Bake Cookies
1 cup unsweetened coconut (I used finely shredded)
2 1/2 cups pecan pieces (not too finely chopped)
1 stick Unsalted Butter
1 cup Peanut Butter
1/2 packet of Splenda Quick Pack (OR 1/2 cup of sugar equivalent)
(I did not have chocolate on hand but will use an 8 oz bag of SF Chips for the next time.)

Variation: 1/2 cup PB instead of 1 cup, and an 8 oz. bag of SF chocolate chips. (just melt the chips in with the PB and the butter.)
Melt Butter and Peanut Butter together until smooth. Turn off the heat and stir in the splenda. Pour over Nuts and coconut, and mix well. Drop on Wax paper in globs and refridgerate until set.

I am keeping mine in the fridge(I do not have AC), but I would imagine if you used chocolate they may set up just fine at room temp (chocolate would help firm them up) But these were Awesome!!! I will definitely be making them again with chocolate when my order comes in. This recipe makes a good amount of cookes, and these are very rich.

These pics are a batch made without the chocolate: They have the texture of pecan pralines.

That is my favorite cookie! Chocolate no bake! :yum: As soon as I get to the store and buy some sf chocolate chips, I am going to try this recipe. Huh, I wonder if I could melt some sf squares in place of the chips? I have that here.

What's the sugar equivalent of "1/2 packet of Splenda Quick Pack"? 1/2 cup of sugar? For those of us using regular splenda or some other sweetener.

You can use any sweetner as long as it equals 1/2 cup of sugar.
I'll edit to add that in.

Where were you this morning?
I just came back from the health food store where I looked at some gorgeous coconut ribbons ½” wide and beautifully soft. I squeezed the bag.
Anyway I did not buy it because I had no idea as to what to do with them.

You could also just press the mixture in a 9x13 and cut squares.

I made these this weekend! Yum but where the heck do you find SF (sugar Free) coconut and SF choc chips? I checked every store! Good though I mixed baking choc (bitter as all hell) and some liquid sweet N' Low turned out okay! Good treat! The BF did not think so.... LOL more for me!

You can get both of these online.
Netrition.com has chips by dixie diner called "Carb Counters Chocolate Chips, Semi-Sweet" that are sugarfree and has no sugar alcohols in them sweetened with splenda. They also have the unsweetened coconut. I also find the unsweetened coconut in a health food store locally.

Kevin, have you tried the Dixie Diner chips? Do they taste like (or at least comparable to) the EWBW chips?

I just wasted 4 dollars today on what was suppose to be unsweetened chocolate chips. Got them home and they were not what i thought they were.
I just ordered both the chocolate chips and the unsweetened coconut from Netrition.

I have only tried them once by poping a few in my mouth as I was vacuum sealing them and I didn't notice any major difference from the ewbw ones. I have not baked anything with them yet since I have ewbw ones to use up first.
