Meal Options and Recipe Resources for Lowcarb or Keto Vegetarians
 

I just sent this meal and recipe list to a vegetarian who wanted to do vegetarian lowcarb and thought I'd share here. I am a 40+ year vegetarian and have been eating this way for 20 years. A lot of helpful products have come out since I started too. The list:

Cheese omelet with salsa and a side of sauteed greens
Veggie burger with cheese and a side of vegetables or greens
Veggie meatballs, sauce and cheese with a side of vegetables
Tofu stirfry with sugarfree teriyaki sauce (G.Hughes)
Palm pasta with sauce and cheese or meatballs
Sauteed eggplant made like eggplant parmesan
Dinner salad with hb eggs, blue cheese
Crustless quiche with cheese, mushrooms, onions and a veggie side
Sauteed Gardein "Be'ef" in teriyaki, over mixed veggies
Various casseroles with an egg base*
Any casseroles that call for ground beef - sub veggie crumbles*

If you add "Keto" bread to the mix, you add piles of other options:

Grilled cheese and butter
Peanut butter and sf jelly,
Veggie burgers on buns
Veggie BLT with Avocado
