Cauiliflower Salsa Salad
400g cauliflower florets
300g ripe tomatoes 20g spring onion, finely chopped 1/2 red bullet chilli, minced 1 kaffir lime leaf, minced 1 T Thai fish sauce 1/2 T dry red wine 1.Steam or microwave cauliflower until just tender 2.Place spring onion, chilli, lime leaf, fish sauce and wine in a large bowl 3.Run tomatoes thru a cheese grater, grating into the bowl with other ingredients, discarding skin. Mix and mash well with a fork. 4. Stir in cauli, breaking up the florets. Serve warm or chilled, as a side dish. Calories: 171 Fat: 0.6g Protein: 9.2 g Total Carbs:40g Net carbs: 26g |
