Cheesy Spinach Casserole
 

Tried this tonight and it's great! For anyone looking for a wonderful side dish made with spinach.:)

CHEESY SPINACH CASSEROLE
20 ounces frozen chopped spinach, thawed and drained well
1 small onion, slivered, 2 1/2 ounces
2 stalks celery, finely chopped
8 ounces fresh mushrooms, sliced
2 tablespoons butter
1/2 cup mayonnaise
1/2 teaspoon salt
1 teaspoon pepper
1/4 teaspoon garlic powder
4 ounces cheddar cheese, shredded

Sauté the onion, celery and mushrooms in the butter until very soft and a little browned, about 20 minutes. Combine all of the ingredients in a greased 1 1/2 quart casserole or 8x8" baking pan. Bake at 350º, uncovered, 30-40 minutes or until nicely browned and bubbly.

Makes about 6 servings
Freezing not recommended
