Is there any place that still fries in beef tallow?
 

Question in the subject line. Are there any in the USA? Are there any in Canada?

I wish! If we all start asking them to do it and paying for it, they will, though...

McDonald's used beef tallow for their fries for the longest time and when they switched to "vegetable oil" they ruined them completely. I have already asked them a couple times to use tallow again, if more people follow suit we could get what we want.

Local Farm to Table restaurants will sometimes fry in Duck Fat or Lard, I haven't asked about beef tallow or seen it yet on a menu. Side at Mothers Day brunch was potatoes wedges fried in duck fat... :yum: rare treat.

For a chain, Buffalo Wild Wings claims to fry in Beef Shortening. How that differs from tallow..no idea. But they openly note the beef shortening on their menu, so the HQ should be happy to explain.

You can always buy tallow from Fatworks or US Wellness and make your own :)

I just put in an order yesterday to a local grocery store for beef trimmings- I buy about 20 pounds at a time. Share with the dogs and store in the freezer as it doesnt hold well in the fridge.

Took many stops to talk with the butcher department of many grocery stores to find a shop that would save up the trimming for me. Prices may vary but I pay about $1 a pound for fresh trimmings.

Broiled it tastes like heaven. A little is satisfying. Cut into chunks, it can be baked until the chunks that are crispy delicious when lightly salted.

Billy--- while I would like to see beef tallow used again, given the political climate around beef/ fat/ oils, I wonder how many decades will pass before this comes back. While I TOTALLY LOVED McDONALDS fries, I RAREly eat them. Just a couple as they are a health hazard. Dr Atkin cautioned about the combo of the starchy foods combined with fats--- has this been debunked??? Is it really the fault of the refined seed oils and just too much refined foods like breads that led us to this epidemic of obesity?

Only of interest as a local story, but a fish & chip shop appeared in Nottingham UK that deep fries chips and battered fish in beef tallow (aka beef dripping) -

This was a traditional fat for use in a UK 'chippy' but I think the place is unique now in using beef dripping for frying. It has been very successful - they expanded from one to three shops in a few years, and are always crowded. It's the only chippy I would go to since they opened - just the smell as you approach hits your appetite button, and the taste is delicious.

Again in the UK, I was told that Harry Ramsdens (famous Northern chippie chain) fries in dripping.

Beef tallow IS much more appetizing than veg oil--- just cubing the fat and rendering is a delight to the senses. Never have that reaction to veg oil.

A quick google indicates that Harry Ramsdens switched from beef dripping to vegetable oil in 2001, to be vegetarian-friendly.

I see this is an old thread - just popping in to mention Buffalo Wild Wings uses beef tallow to fry food. It's listed at the bottom of their allergen page that they use "beef shortening."
