Zucchini Ground Beef Casserole
Just saw this recipe on Food.com- sounded good and like a yummy way to use up some of that extra zucchini from the garden.

Sounds very good! Kinda reminds me of my Unstuffed Zucchini recipe, but this one is more Mexican and mine is more Italian in flare.

Sounds like a good, simple everyday meal. Best of all: no cheese! It's really hard to find recipes around this site without dairy.

No garden zucchini/courgettes here, but have been buying lots of them since they're so cheap now!
Will definitely try this recipe, I love cumin! Might have to find an alternative for the jarred salsa though, but might make it myself, too. Thanks for posting! |
Making this for dinner tonight and since I'm a single gal for a week, I'll have some leftovers! I don't have zucchini but I'm going to try it with yellow summer squash- review tomorrow.

Well, this was really good and easy! I did dice about 1/2 of a red pepper into the meat and onion mixture and let it soften before adding the salsa. Also, at the very end I stirred in 2 oz. of cream cheese to make a creamier sauce. Very much a comfort food- kind of felt like something my grandma would have made. Try it!
