Corned-beef hash
Just invented this! I cooked half a chopped onion until soft and a little brown, added in some finely chopped brussel sprouts (you could use another veggie, or none at all). Added a clove of minced garlic. Added pepper and sauted until everything was glorious. Then I cooked an egg and scrambled it together with some corned beef hash. Delicious! Even better the next day.
Next time I'll try adding green peppers and maybe red pepper flakes. |
Need to try that!

Doesn't corned beef hash have potatoes? Brussels sprouts are versatile! The kids put them in quiche the other day and it was amazing!
|
substitute cubed sunchokes for potatoes. problem solved!

Sunchokes are so good. We just got them at my job for a snack for the kids. Are they low-carb? |
You can buy canned corn beef..no potatoes. It is in the store near the canned corn beef hash. It is great heated up with a fried egg on top, or heated up with some sauteed spinach and onion, or...

i just bought daikon radish... was planning on making hash, tonight.
|
I forgot about giant radishes!
|
I’ve done it with cauliflower. Not bad and even resembles potatoes: )
|
I put cauliflower rice in it this last time. Came out good. Also added dried oregano and hot pepper flakes.
