I too miss potatoes. Maybe this will help a little. It has helped me. I make "mock" mashed potatoes using turnips. Cook well, mash with cream and lots of butter. I also tried making mock hash browns. I bought frozen cubed turnips, sauted in butter till almost done, added onions a little salt and pepper, and garlic powder, turned up the heat to brown. They were pretty good. It was nice to have something to dip in my yolks for breakfast. Let me know what you think.
