Bacon & Cauliflower Salad
 

Dressing:
1/2 cup cream cheese
1/4c chopped shallots
1/4c homemade mayonnaise
3T sour cream
2T each of dijon mustard, lemon juice & white wine vinegar
3/4 tsp black pepper
1/2 tsp salt

Salad:
12 ounces of steamed cauliflower, chopped into bite size pieces and chilled.
1/2c frozen-thawed green peas
3/4c diced red bell pepper
1/2c thinly sliced green onions
1/2tsp grated lemon rind
1/4c chopped fresh flat leaf parsley

4 slices of bacon, cooked and crumbled


prepare salad dressing by combining all ingredients in a food processor and blending until smooth.

prepare salad by adding all of the ingredients together except for the bacon, in a bowl. add dressing and top with crumbled bacon.
serve immediately.
