Low Carb Casserole/slow cooker recipes ?
 
Hi All

Been on low carb diet for about a week and lost 2.1Kg, I have always tried to AVOID fat and eaten loads carbs/pasta etc but i do not get a chance to train/exercise much due to work.....

Anyway i purchased a slow cooker and have been making casseroles with chicken breast/thighs/legs/beef and adding carrots/onions/garlic/mushrooms then serving this with steamed cauli cheese, green beans, broccoli, sliced greens.

BUT had a massive shock today when i read the Colmans packet of Chicken Casserole mix !!!!

68.2g Carbs per 100g (of which sugars 10g)

How can i avoid these packets and make my own low carb version ?

Get spices.

Throw them in until it tastes good.

Yes - just throw whatever spices/herbs you like into the pot!!

They do have "some" carbs, but nothing like those over-processed packs!

Thanks guys, pretty new to this and just finding my way around.

Seems VERY odd eating fatty foods, no/little carbs........

Need to find a some gravy granules or similar for my Sunday dinner now...lol

Just checked a huge tub of Bisto i have and its 59.2/10g carb/sugar per 100g !!!!!!

Gravy granules are not particularly lowcarb as they usually are made with starch and sugars.

Better to use the meat drippings/juices (if there are any) and add cream and xanthum gum to get the consistency you like.

I tend not to make gravy but use sauteed onions/celery/red peppers processed into a puree with some cream/butter added to make a sauce instead.

Not sure where i can get xanthum Gum or what it does...lol

Think i will inpsect all the cubes about and see which one is the lowest amount of carb per cube and just use one/two in the slow cooker, should make a decent gravy.

Or i am sure i have seen ready make stocks in Tesco that might be lower carb.

Xanthan gum (sorry, spelled it wrong earlier) is a thickener (does the job of flour or other starchy thickeners) and is for sale in the baking section of most big supermarkets.

I also did a search for "stock" on Tesco's website.

Most of them you can read the ingredients of online as well as the nutrition numbers to work out which is best before going to the shop as the tiny print on the labels is so difficult to read.

It looks as if most of them have sugar and starches in which for me would make them no-no's.

Looking forward to tea tonight... just bunged 8 chicken thighs in the slow cooker, covered with spices and seasonings. Should be smelling really nice by the time I get in... and then there will be spaghetti squash! Need to look at the methods for cooking that...
