Chilidog Casserole
 
I got this off another lowcarb forum but it is sooooooooo good that I just had to share it with all of my friends here. Another plus...it is fast & easy!

CHILI DOG CASSEROLE
1 to 2 lbs ground beef
package of chili seasoning
1 sm can Tomato sauce
1 pkg hotdogs (the ones I use have only 1 carb each)
shredded cheese
diced onions
sourcream

Brown ground beef, drain fat. Add tomato sauce and chili seasoning & mix well. Spread in bottom of baking dish. Cut hotdogs into rounds and layer over ground beef mixture. Top with cheese and cook in 350 oven 10-15 minutes or until cheese melts. Top with onions, sour cream, more cheese or even dill relish...whatever you like.

Number of Servings: 4-6 (depends on how much ground beef you use)
Preparation Time: 20 min.


*Sorry, don't have the carb count for this recipe but it's not high.

Leslie, do you think that LC ketchup would be a good substitue for the tomato sauce? I'd like to make this today, but the tomato sauce is the only thing I'm missing and I'd like to avoid the grocery store (evil, evil place :lol: )

Thanks for posting this - it looks yummy and also like something my kids will eat (which is a BIG plus). :p

leslie, I just made this with the Heinz 1carb ketchup.

I browned beef and 4 scallions mixed in 8oz ketchup and pace chilli mix and then layered bottom of casserole.
then a layer of colby/jack mixed with 1 c. sour cream
then hot dogs

toped with chedder cheese......Yum Yum Yum!!!!

Thanks, Kevin! And that's a nice variation on the original recipe. I have it baking right now and I made it exactly as Leslie posted it, but next time I may put your twist on it.

The lowcarb ketchup I have is too sweet for this. I'll take an extra carb or two for the sauce. :p

Okay, I just got done eating this and it is delish! Absolutely tasted like a chili dog. I dipped mine in a little mustard for that hot-dog effect and it was perfect!

This was just great!!!! My hubby went back for more and more and more until I said "HEY, MISTER thats my lunch tomorrow" Way to go. I LOVED it with sour cream!

Chili dogs! Who'd have thought? I know my kids will love this one, and that's important since they haven't eaten a low-carb entree since I first discovered the Deep Dish Pizza Quiche, LOL! Any chance the results would be the same with petite diced tomatoes instead of sauce? I'm thinking I'll cook the tomatoes in with the beef to soften them - saves a few carbs that way.

I have some pork chops I must cook tonight, but tomorrow night, it's definitely gonna be the chili dog casserole!

I put this in MyPlan, using 2 pounds of ground beef, 8 oz. tomato sauce, and topping off with 2 cups of cheddar...Totals for recipe are:

39.43 CHO
364.11 Protein
316.89 Fat
39.43 PECC
4548 Calories

If six servings, net carbs would be 6.57.
If eight servings, net carbs would be 4.93.

YMMV...depending on how much onions, additional cheese, relish, mustard, and/or sourcream you heap on. :)

I'm off to WalMart to buy ingredients, as this caught my attention and sounded absolutely yummy.

This sounds great, but what is the "pkg of chili seasoning" you refer to?

We made this today and it turned out pretty good! I estimated about 10 carbs per serving ( 6 servings total 1 pound ground beef). The chili seasoning we had was 16 carbs total so that really brought the carb count up. Also the dogs we had were two carbs per serving. Here's the breakdown I came up with

10 hot dogs 20
chili packet 16
tomato sauce 9
cheese 15 *we probably used 3-4 cups, dh loves lots of cheese

total carbs 60

This made 6 good servings for us. If you use the 1 carb hot dogs and use less cheese you can easily cut this recipe down to about 7 carbs per serving.

Very good recipe! The thing I loved the most about it was how EASY it was to make! Thanks!

Not only can you find low carb hotdogs, but making your own chilli seasoning, or finding a lower carb premade one would really bring that way way down

This was delicious. My husband ate it all night! I did use xtra lean ground beef, kidney beans and tofu dogs (less fat, less carbs, more protein!) with part skim cheese and ff sour cream just to make it more sb friendly but my husband is demanding i make this every week now! Thanks!
OH, also, i didn't have tomato sauce, so i added a tiny can of tomato paste with just a bit of water until it had a super thick texture.

Just in case you did not know, kidney beans are about 52 carbs for a 14 oz. can and not a bit LC.

Thanks for the concern kevinpa, but i am on the South beach Diet, and beans are permitted. Kidney beans included. :D

BTW, I used a 19oz can, which is 71.28 g carbs and 41.04 g fiber = 30.24 effective carbs...ten servings in my casserole means that there is an extra 3.024 effective carbs per serving. Sounds fairly low to me :thup:

I made this last sunday and it was great!! I used raw onion on top and drizzled mustard on top. mmmmmmm I will definately be making this again.
