okay so this is old but what's everyone's favorite vegetable side item with this? I'm going to break in a new pan we got as a wedding gift with this recipe.

This is how I season my Chili, and no added carbs for the chili seasoning packet.

For 2 to 2.5 lbs of meat, I use:

Add chopped onion & 2 or 3 cloves minced garlic when browning the meat.
Then add:

3 Tablespoons chili powder
1 Tablespoon oregano
1 Tablespoon cumin
1 teaspoon paprika
1 teaspoon ground mustard (powder)
1/8 to 1/4 teaspoon cayenne pepper (powder) (optional) and be careful, it's very spicy and a little goes a long way
1 teaspoon salt
1 small can tomato paste (instead of tomato sauce)

Since you are using paste instead of sauce, I add a little water, but how much will depend on how long you can let you chili simmer (so the water can evaporate). The paste helps to make the chili thicker without corn starch or other additives, since you control how much liquid to add.

This is a very good Chili recipe by itself. I am from Texas, and we top off a bowl of chili with chopped onions (or green onions) and some freshly grated Cheddar cheese. You can also add a dollop of sour cream.

I can't wait to try this chili dog recipe. Sounds great!

This sounds delish for dinner tonight. Stopping by Albertsons to pick up some Hebrew National 100% Beef 1 Carb Each No Filler Hot Dogs. I was skeptical before, but after tasting them they are great and would be perfect for this dish!

Made this today. Much better than I anticipated. I encourage anyone to try it that isn't quite sure if they will like it or not. I went light on the chili seasoning out of preference, but that was the only modification I made. Thanks!

My kids can't stand ANYTHING that they think a bean is in and they know that Chili has beans in it (even if this doesn't!) and so they are very skittish about eating it. Thinking that one bite they might actually sink their teeth into those dreaded things. So, we have renamed it at our house It is now known as "SpaghettiDog Casserole" No complaints and they wolf it right down!

Isn't it funny how it's all in the name! My DH will NOT eat anything with cheese and years ago Kraft used to market a bottled lemon curd that they called "lemon cheese". Do you think he would touch it? Not a chance! Oh well, it was all the more for me!

I'm happy the thread is still active - I just had a friend ask me for it :)

I'm going to try this one, for sure. Thinking I might try it on Oopsie rolls, as it really does sound like something that would be good with a bit of "bread". I like the idea of putting the cheese on after, as this is what I do with chili and would rather have it that way than melted. I make my own chili without packaged seasoning, same as several others on this thread. Will try to find lower carb hotdogs too--although that's tricky here. My mouth is watering!
