Birch bender keto pancake mix
 

I have found this at whole foods and another fancy specialty market.
It uses almond, cocnut, tigernut, and cassava and has 5 net carbs plus 5 fiber.
It tastes exactly like pancakes to me!
I highly recommend it.
Soon I plan to try making pancake muffins with it.

I've used the Paleo mix, which is higher carb, but really good too! I will try the keto mix soon.
