Is pumpkin Ok??
 
I am finding conflicting information about the Carb cotnent of pumpkin.

Is pumpkin a low carb food? If it is, I was planning on using pumpkin slices to make mini pizza bases.

Pumpkin is an awesome highly nutritional low carb food - canned pumpkin pie filling is full of sugar but JUST pumpkin is great.

Sure, plain pumpkin is great. Pumpkin is an allowable Atkins Induction food so you know the carb count has to be pretty low.

From what I understand, raw pumpkin only has about 1.1 nc per 1/2 cup. Sounds like a low-carb food to me!

pumpkin is a great lc food. I use it to also make a "dessert" around thanksgiving using splenda-pumpkin "cups" basically the pie filling without the pie. lol.

Just make a fruit salad with pumpkins without sugar and some nuts here and there . It's amazingly delicious and totally LC as well . I love fruit salads :)
