Cheesy Broccoli Casserole Bake

Thought I would share our supper for tonight ... :yum: It was very good.. I did double.

CHEESY CHICKEN BROCCOLI CASSEROLE
2 cups diced cooked chicken
8 ounces frozen broccoli cuts or florets, cooked and drained well
1/4 cup sour cream
1/4 cup mayonnaise
1/2 teaspoon chicken bouillon granules dissolved in 1/4 cup hot water
1 teaspoon garlic powder
4 ounces cheddar cheese, shredded, 1 cup
4 pieces bacon, chopped and fried until crisp
Salt and pepper, to taste

Put the chicken in a greased 1 1/2 quart casserole; sprinkle with a little salt and pepper. Top with the broccoli; season with salt and pepper. In a small bowl, whisk together the sour cream, mayonnaise, bouillon mixture and garlic powder; pour over broccoli. Top with cheese and sprinkle with bacon. Bake at 350º 25 minutes until hot and bubbly.

Makes 4 servings

Per Serving: 432 Calories; 32g Fat; 31g Protein; 5g Carbohydrate; 2g Dietary Fiber; 3g Net Carbs

I made somthing like this last week and loved it. MMM, never thought of bacon as an addition tho. Can't wait to try it.

I did make this for dinner last night and it was awesome :thup: !!! My dh loved it. I can't wait to have it again for lunch today. This is a great recipe...I give it a 10!!!

I have a slight variation of this recipe, can cream of mush soup with the mayo instead of sour cream and mix in some curry powder (based on taste) and no bacon on top. Its one of my favorite dishes but I am going to try it your way. The topped with bacon sounds fantastic.

I made this yesterday and it was fantastic! The only thing I did differently was to add a bit of garlic-herb seasoning to the batter and to actually mix some of the cheese in to the batter. It was the ULTIMATE comfort food and we ate the whole thing. Thanks very much!

Does the can of soup raise the carb count significantly? I would love to add that to some of the casseroles but I thought it would.

One can of Campbell's Cream of Mushroom soup has 22.5g total carbs and 2.5g fiber. Some people use Campbell's Cream of Chicken & Mushroom soup, instead, which has 17.5g total carbs and 10g fiber per can.

Compare those carb counts to the 2.5g total carbs and 0g fiber in the 1/4 cup sour cream the original recipe calls for. :)

I'm going to the store tonight so I'll look for that cream of chicken and mushroom soup.
