Peanut Butter Protein Bars
 
Peanut Butter Protein Bars
3 tbsp sf peanut butter
2 tbsp butter
4 oz cream cheese
1/4 cup splenda
1 tsp vanilla extract
2.5 scoops vanilla protein powder
Melt butter, p-nut butter & cream cheese in microwave. Mix in splenda & vanilla. Add protein powder 1 scoop at a time, you will need to use your hands towards the end. Press into small baking pan & chill until firm. Makes approx 6 bars at 3 carbs each

I got this recipe off of another web site, and I've modified it many different ways. Usually I'll make two layers, one with vanilla protein powder, and one with chocolate. (I cut these into smaller portions as they are doubled). My favorite is a German chocolate
type bar, I make one layer chocolate (I add melted unsweetened chocolate to make it fudgier with extra spenda) The second layer I omit the peanut butter and add 1/2 cup pecan pieces and 1/2 cup coconut. The ways you can vary this recipe are endless. The bars always turn out a little different depending upon what type of protein powder I'm using. It's possible to lower carb counts by carefully choosing ingredients.

I have been enjoying a mix of PB with cream cheese and sucrose. I like the vanilla idea and love the chocolate idea. :D

Do you use regular unsweetened baking squares? Are they ok, or do I need to try to find a specialty LC chocolate??? :confused:

is there a difference between unsweetened chocolate and bitter chocolate?

Use either unsweetned baking chocolate, comes in a box wrapped in indivdual squares, or unsweetened coco. Bitter chocolate would be the same as unsweetened I imagine.

i'm a little bit confused about using artificial sweeteners. i thought they were a no no?? if not, i'm all over this one! sounds great!

I just made this. I used Designer whey protein french vanilla and 12 drops of sweetzfree. After an hour in the fridge, I ate some -- it is chewy and tastes like peanut butter fudge... very yummy!!!! Gotta love eating low carb :) Thanks so much for the recipe.

ugh, i just made this. maybe i did something wrong. i thought i followed it exactly. after being in the fridge for several hours it was still completely gooey. i ended up putting it in the freezer for a while to harden it a bit.

this is the first low carb thing i have made using artificial sweetener. i couldn't eat it. i just really can't stand the taste of fake sweeteners. it tastes like chemicals to me.

i guess i'll have to just get my sweet fix from the occasional piece of fruit :(

I've been looking for a way to get enough protein without having to make a shake and wash the blender and so on. This might do. I will try them in the next few days and report!

My brain must be tired though because I can't think of very many ideas for flavorings. Chocolate of course. Peanut butter. Coconut Pecan (gods that sounds good). What else can anybody think of? I have a dozen davinci syrups, at least 20 flavor extracts, and still I can't think of much.

Maybe... rum flavoring for a rum-ball effect. Maybe add date-nut flavor to the pecan idea. I know if I add Davinci's I'll probably need a little polyD or more cream cheese to balance the liquid. I wonder if flavors like "lemon" (sans chocolate of course) or "cookie dough" would be good? Just to be really weird, I have to wonder if all flavoring were out but a protein powder, what an extract like 'carrot cake' flavor would do. Either good or horrific, I am guessing. I think I may divide this into four and make each a different flavor, just so I see what's edible and what's not. I would really like to come up with some kind of homemade protein bar that I could actually eat. It may be the ONLY way I ever get enough protein in a day. I'll report back when done.

I just made this and the sample I had before placing in the fridge is very good! I used Jay Robb chocolate whey protein powder in mine.

Just made these, they are in the fridge setting up right now. Licked the bowl clean! These are very easy, tasty, and love that I do not have to turn on the oven.
