Carb-Free 'Corn
 
"Carb-Free 'Corn"

So, I just posted on a thread about trying to find a crunchy carb-free snack to replace popcorn, or as we would say in our family, just 'Corn.


Popcorn and a movie is tradition. It's a ritual like turkey at Thanksgiving. For me, it is a very cherished memory of my father.

Since starting HFLC, we haven't eaten popcorn and I truly feel like something is missing when we turn on a film, so, here's what I've come up with:


"Carb-Free 'Corn"

Oven to 350
Grease baking sheet with thin layer of butter
Spread out dry-curd cottage cheese (1 carb per 1/2c)
Sprinkle a little salt
Let roast 'til golden brown (20 MINUTES?? not sure, I didn't time it)
Put in bowl (drizzle more melted butter or sprinkle w parmesan or popcorn sprinkles) and ENJOY munching while watching your movie! :)

...'cause the show must go on!

I just saw this. What is dry- curd cottage cheese and/or where can one buy some?

Although rare, I have seen it in some normal grocery stores. Look by the cottage cheese in the dairy isle.

Interesting! I wonder if you could dehydrate it... might be pretty nifty tasting.

You could probably drain the regular cottage cheese as well and then you could have the milk from it for a dressing couldn't you? You would have to probably let it drain say overnight and then you could spread the cheese out and have it to roast, but you could take that cream and add some garlic powder and a little sour cream and you would have a good creamy garlic dressing???
