Breakfast Bites
I commute nearly 2 hours to work everyday so preparing breakfast can be a large task. I came up with a way to make breakfast for a week in one day.
6-large eggs Crumbled cooked bacon, sausage and ham (or anyone you pick) Shredded cheese Diced onions, peppers or tomatoes (optional) Mini muffin pan Place a teaspoon of meat into each cup of the muffin pan Then add your choice of veggies Beat eggs in a liquid measuring cup with a spout Pour egg mixture just a little over half way (eggs will puff up) Top with shredded cheese Bake in the oven 350 for about 10-12 minutes (watch so they don’t burn) Let cool, wrap each in plastic wrap. Heat as needed refrigerate the rest. **For families without low carb dieters take refrigerated flaky layered biscuits, divide layers in 3, press into pan..Then fill as above. |

I did a similar dish:
2 eggs (or more if you like), chopped turkey or ham, shredded cheese, chopped fresh parsley, bit of pepper, 1-2 tbsp dijon...mix all together and pour into sprayed muffin tin (regular sized) and bake at 350 for 15-25minutes (depending on your oven). I can eat 2-3 of these easilly, but they heat up in the microwave like a dream. |

Nice & easy - sounds good! Another addition would be some chopped spinach & a sprinkle of dried minced onions - course now we would probably need a bigger muffin pan :lol:

I love the idea of both the recipes on this page. So easy and convinient. If you make a bunch ahead of time, there's no excuse for cheating. The possiblites of are endless for different fillings. I think I'm going to try smoked salmon, scallions and a drop of low fat cream cheese.

Looks like I found my single-serve quiche recipe. I'll bet I could play with the ingredient sizes and make an individual serving in a ramekin. Thanks for the idea!!!

I do this all the time, but to my eggs I add some heavy cream and it makes them so nice and fluffy! These freeze nicely also and then defrost and heat and eat!

Made these for breakfast this morning and had 2 - they were delicious - used sausages and tex-mex cheese - next time will try bacon and cheddar or maybe taco meat. Thanks for the great recipe.

Just pulled a batch of these from the oven and scarfed one down. Delicious. This is going to save me 15 precious minutes each morning for the week. Now I hope I don't just keep hitting the snooze button since I know I now have 15 minutes to spare. lol. ;-)

Is there a way to put how many carbs on the recipes. I'm new and counting carbs :)
