Nothing from the freezer for me today. I bought some lovely leeks the other day, and am experimenting with a new (to me) LC crust (neither DH nor I is fond of crustless quiche) for a leek tart this evening. I just blind baked the crust (baked without the filling, for any non-cooks out there), and it looks and smells quite nice, as it cools.

I subtracted and added to the freezer today - used up broth for soup, but added some turkey bones for the next batch of broth.

I added a bit - the darker leaves from the leeks. Even on sale leeks are expensive enough that I don't like to waste any, and a handful of leaves added into a pot of broth (and then strained out) is a nice addition.

Wish I had a small pressure cooker. Kids caught a huge bass and its been in freezer ever since. Need to feed it to the dog.

I made a casserole yesterday with frozen Italian sausage, and frozen cauli rice (+ fresh onions, red peppers, cheese). OK, not great.

Not too bad this week: I nuked some LC BBQ sauce chicken for dinner on Wed. Today, I made beef stew using frozen broth that I made last month. Tomorrow, I'm making cauliflower bacon soup with likewise frozen chicken broth and leftover bacon that I froze.

I know it might sound like LC heresy to imagine enough leftover bacon that you'd have to freeze it :lol:, but I eat a lot of it at work and yes, it IS possible to get baconed out. It's also nice to have it easily microwavable from the freezer, especially if it's not on sale anywhere.

This is such a great idea (as is the whole thread) :thup:

Although I store such essentials a pre-chopped onions, my home made bone broth, bones for the bone broth, I also have a tendency to put other items in the freezer and then not use them :rolleyes: Often this is because I've bought more than I actually need, or I buy something for the following day or later in the week, and then don't fancy it, so in the freezer it goes.

So I've just taken out some salmon fillets and put them in the fridge with the intention of having them for dinner tomorrow :)

I'm making a seafood chowder this evening, with some "mixed seafood" from TJ's (shrimp, scallops, squid), plus some extra shrimp, all out of the freezer. Onions, bacon, a bit of red pepper for color, celery, and some cubed celeriac to mimic potato. Once I've shelled the shrimp I'll cook the shells in some water to make a broth, and use that, with HWC, for the liquid.
Our internet was out for several days, so I couldn't mention that I defrosted some meatballs for dinner the other night. Very simple, just meatballs & some sauteed veg.

I used up some sausages and frozen quiche this week, but I ended up adding to the freezer. I chopped the remainder of my carrots and celery to freeze. Better than wasting it. I also ended up buying a package of chicken thighs and sausages from the reduced rack that I never got around to. :rolleyes: Not a smart purchase. As if I was going to cook on a Thursday.

Next weekend, I'll make pumpkin sausage soup out of what's in the freezer. :thup:

While looking in the freezer for ground meat for burgers tonight, the 1st packet that came to light was elk - given to us by an acquaintance who's husband likes to hunt, but doesn't particularly like to eat game (!!! My only comment on that will be that at least he passes it on to others who appreciate it!). I also pulled out a whole chicken, to defrost in the fridge. I will cut it up tomorrow or Tuesday, and will be able to get several meals from it.

I 'discovered' some duck confit in the freezer over the weekend.

Had it for dinner on Sunday, with roasted cauliflower mash :yum:
