I'd think a couple of weeks. A month off and I bet if dairy is an issue when you go back on you'll notice things getting worse. For me, I feel it after a single day of going back on.

I've tried goat milk, sheep cheese... doesn't make a whit of difference.

One final thought. You might not notice your symptoms going away, but you'll sure as heck notice them coming back.

I also eat a pretty much Paleo diet and really like the principles. Recently (a little over a month ago?) I gave up dairy completely and am amazed at the results--I lost 10 pounds without really trying (and that is a significant amount for me). I sleep MUCH better, haven't had a night with less than 7 hours of sleep and I fall asleep easily. No more hot flashes at all. I haven't really had skin problems, congestion or bowl issues so no difference there.

But eating this way is a struggle for me! I did not find giving up gluten to be that hard. But I love dairy foods. Trying to go dairy free, as well as gluten free, is a nightmare at social events or restaurants. (And I'm also much more aware of bad oils, GMO foods, inhumane animal practices etc... now) I've become one of those picky eaters that people roll their eyes at. I'm dreading the holidays coming up, how do people cope with this?
