hi everybody,

We all know that egg whites beat up fluffier when they're room temperature than when cold-from-the-fridge. But what to do if we want to bake RIGHT NOW, and we forgot to set the eggs out??

Separate the cold eggs, placing the whites in a small bowl. Place this into a larger bowl of hot water (or the sink). The whites will warm up quickly! Warning - do not try to heat up in the microwave. Stupid me, I did that once; had poached egg whites in 10 seconds flat ... :rolleyes:

For the record, cold egg whites will whip up okay, it's just that the protein (albumin) can hold more air when it's warm, thus will be higher and fluffier.
