Help!!!! I have a church function on Wednesday and I have signed up to make a cheesecake. The reasoning is because we would like to eat something legal. :D However, I have never made a cheesecake before, let alone a low carb one and I don't have time to experiment with different recipes. Can you recommend a great one? Thanks for your help!!!!

This is my favourite, I don't do the rhubarb topping though, I usually use strawberries and sugar free strawberry syrup as topping. Also I usually just use ground pecans in the crust instead of almonds and walnuts.

crust:
1 c. almond flour (ground almonds)
1/4 c. brown sugar twin,
1/4 c. butter,
1/2 c. chpd walnuts.

Mix with cutter till crumbly.
Pat in bottom of greased 13x9" pan. Bake ~ 375 10 min.

Filling:
2 soft. pkgs. cream cheese,
3/4 c. gran. Splenda,
3 eggs,
1 tsp. vanilla.
Beat until light and fluffy, pour over crust, bake 20-25 min. Cool.

Optional Topping:
3c. fresh or frozen rhubarb, thawed and drained,
1/2 c. liquid splenda,
1/4 c. water,
1 Tb. cornstarch or other lc thickener.
1/4 tsp cinnamon.
In pan,
combine rhub., splenda,and water, corns.and cinn. Cook, stirring const. for 5
min. Remove from heat, cool. Pour over cheesecake . Cover and refridgerate
at least 1 hr.
