I make this for breakfast a ton. I shred red cabbage (I just like the color) I cook some bacon in a skillet, then place on paper towl to drain. Without draining the pan I throw in the shredded cabbage. After it frys for a bit I take it out and crumble the bacon into it. Then I have basted eggs over it Had to figure out something to have eggs on without toast.

I used to make something similar--fried cabbage and corned beef (from a can), with some extra bacon grease thrown in so the corned beef wouldn't stick to the bottom, and for some extra flavor. I realize corned beef has nitrates, etc (and has been sugar-cured), but in moderation it is sooo good, especially with a teaspoon or so of black pepper thrown in while everything is frying.

THis is awesome, I didn't put onion in but did the bacon and cabbage with some pepper. It came out tasting like the inside of an egg roll.....maybe some finely minced chicken in this would be good, got the makings of a stir fry here! Thanks so much for this recipe!

Default A Twist on This...

I have been making this, but decided to put baked chicken in! At the end of cooking the cabbage, etc. I just toss in the chicken to get it warm...it's terriffic and a one pot meal! This keeps well and heats up great for the next day or two as well.

Default Here is the recipe I use

I've been making this for a few years now and everyone loves it and nobody know's it is low carb. (I make it often when we have company so I don't need to make alternative dishes.) I find the cider vinegar really makes a big big big difference in the taste. I also use the pre-shreded coleslaw stuff.

Fried Cabbage with Onion and Bacon


Ingredients:
5 thick slices or 7 thin slices of bacon
2 Tablespoons butter
1 small white onion, sliced very thin
1 small head of cabbage, cut in half
2 Tablespoons cider vinegar
1 bay leaf (optional)
water

Cut bacon into 1" pieces. Place in large frying pan and cook until ready to turn. Add butter and onion and cook till medium brown. Add cut cabbage and add bay leaf if using. Add enough water to cover (1/4 cup at a time.) Cover and allow to steam, stirring often, and adding water as needed to help loosen the brown bits in the pan.

Cook 15-20 minutes (it will cook down quite a bit in volume.) Taste to check for desired tenderness. When almost done, add vinegar, stir, and heat an additional 5 minutes.

Sprinkle with coarse black pepper just before serving if desired.

Makes 4-6 servings. 4 to 6 grams per serving.

I made this twice in 2 weeks ... so delicious! I use fresh garlic with the onion and top it with Goat Cheese crumbles ... heaven in a bowl.
