I tried frying (in oil) jicama for french fries.. and do not recommend that method. It turned VERY brown (probly all the natural sugar in it) and absorbed a lot of grease. It tasted pretty good, though, very sweet. I did try a bit raw and will definitely buy it again to eat that way - it reminded me of a cross between a potato and an apple. I am thinking the jicama fries baked in the oven might be a better bet, next time I care to try it?

wantto try them in a deep fryer

I tried doing turnips, they where ok. !

I think I will need to biol them first, then soak iun cold water!

Hope this is helpful. I don't understand why the thing doesn't have any fiber, however, it sure "feels" like it does! BTW, I checked my current jicama for label, and it comes from Melissas, a company with a website (melissas.com), which is where I got this info. There are also numerous recipes there for cooking jicamas.

JICAMA



(Pronounced HEE-kah-mah)

Jicama (also known as a Mexican potato) is a large, bulbous root. This crunchy, juicy tuber available from Melissa’s, has a thick brown skin and a white crunchy flesh. A popular Mexican vegetable, Jicama can weigh anywhere from one to six pounds. Its sweet, nutty flavor is good both raw and cooked. Once cooked, Jicama retains its crisp, water chestnut-type texture and flavor. Available from Melissa’s in 10#, 20# and 48# wire bound, Jicama is often a fiesta favorite!

Anybody ever thought of developing a "mock apple pie" using jicama? I was thinking a nut crust, partially cooked jicama with apple pie spices and maybe some cream?

Got this recipe from another board. It sounds yummy and I have the jicama, but don't have the diet cream soda or the packet of diet apple cider mix:

Recipe Name: Mock Stewed Cinnamon Apples (Jicama)

Serves: 4-6 depending on size
Calories: varies
Prep Time: about 30 mins
Occasion: Any
Cuisine: Not Sure
Effort: Easy


Ingredients:
1 jicama
1 diet cream soda
2-3 Tbsp butter
2 Tbsp cinnamon
1 pkt diet apple cider mix
juice from 1/2 lemon
1 cup water
pinch salt


How to Prepare:

Peel jicama and slice into bite-sized pieces. Melt butter in skillet and add jicama slices and diet cream soda, cinamon, lemon juice, and pinch of salt. Stir and let this cook down over low heat until most of moisture is evaporated. Add water and cook down again until thick. The jicama will not get as tender as apples, but you cannot tell difference in taste. You could use this as a side dish for a country-style meal, top with a sweetened crushed nut mixture and bake for a dessert, or serve with lc ice cream or pancakes. If using a medium jicama that makes about 3 cups when sliced, the whole recipe will be 24g carbs total. (51g carbs - 27g fiber)

whyspers: I'm going to try this!! Don't have the diet cream soda either - but thinking I can improvise that with Da Vinci caramel or vanilla syrup and club soda. I find the caramel syrup w/ club soda reminds me of cream soda, so might be worth a shot. Thanks! I'll report back. It won't be today, cos I don't have a jicama right now.

Wow! I just tried one for the first time today! they are a lot better than I thought they'd be.. I could probably munch on a whole one like an apple!

I just so happen to have a jicama, A&W diet cream soda AND a packet of sugar free cidar mix! Perhaps tomarrow I'll try this recipe and report on it..

Ok, I made it!!

First of all, it took a lot longer than 30 minutes.. and simmering it on low was not reducing it at all so I put it on medium and things sped along a lot faster.
I served it to my husband also and he said when asked, and I quote "I'm not crazy about it" He said it tricked him too much.. he wanted to bite into apples and it was like eating raw potatoes. "But it didn't have a bad flavor"
I thought it was pretty good, but I like everything! The sauce was really good! I added guar gum to thicken it up (sprinkled a little in cold water and mixed well!)

I would make it again!

If any of you make it, please post a review!

I tried it cold yesterday and it was delicious.. I probably like it because I prefered seasoning raw apples with cinnamon and sugar to baked apples. It reminds me of that.

I can't wait to make it again! I'm craving it now that it's gone.

DBF brought me some diet cream soda from the US, so as soon as I get to a store to buy a jicama, I'm gonna try this! It sounds yummy

Jeany, yeah! I really hope you like it and i am not crazy, because a lot of the recipes I like nobody else likes.. then I feel bad that it's my fault they made it!
I think it's different for us LC'ers though because we cannot have apples so are more than happy to settle on something fairly close, whereas my DH () eats an apple a day!

Ok! I tried it again.. I boiled the jicama for a long time until it was soft. Then I cooked it in the cinnamon, sf cidar mix and soda etc.
It's not quite done yet but I tasted much more like baked apples.. Even my dh liked it this time!
I can't wait till it finishes reducing.... I also recommend adding guar gum to thicken it up (be careful or you'll end up with lumps!)
What a great recipe!

ok, I tried it!
Wow!! What a difference. I served it hot with a scoop of atkin's ice cream and it was good enough to be real apple pie this time.
I tried it side by side with the old crisp way and you wouldn't believe how much flavor the soft batch sucked in.. Like a sponge! The crisp ones have a strange flavor that the soft ones don't! This is really something!

Hope you all try it..
