Has anyone tried using chayote for an apple substitute? It's the closest thing to apples that I've come across so far and it's fairly bland tasting too so I imagine it would take on flavours quite well. I used some grated chayote soaked in a little lemon juice in my muffins and thought it was great. This vegie is discussed in great detail on another well known lc forum and seems to be very popular as an apple substitute.

I have no idea!!! I am on a yahoo recipe exchange list where I get most of the LC recipes I try, but I do search the net for stuff sometimes. Didn't think in the early days to record the sites where I found recipes...

[edit] The first one does look like it came from the Low Carb Luxury site.. but the second jicama one came from here: http://www.cookingcache.com/mockste...eslowcarb.shtml I just typed both recipe names into my browser and they came right up.

Just found this one which sounds interesting, too. The site also has the Mock Stewed Cinnamon Apple recipe on it.. Seems these recipes get copied over and over, eh? This site is: http://www.intheknow.us/cooking/lowcarb-allposts.asp


Mock Apple (Jicama) and Cinnamon Oatmeal

2 cups of Jicama, cut into 1/2 inch cubes
4 tablespoons butter
1 tablespoon cinnamon
1/4 cup or 6 packets of Splenda
1/2 cup heavy cream

Boil the jicama in enough water to cover. When the water cooks out add enough to cover again and boil that down again. For the third round add more water, the butter, cinnamon and Splenda and cook down until there is half of the liquid left and then add your cream. Cook until almost dry.

Now take the warm Jicama and transfer it to a food processor with a chopping blade. Chop until as smooth as possible, leaving it a bit chunky is okay too.

This makes 4 servings.

Calories 220, Fat 20g, Total Carbohydrates 11g, Dietary Fiber 4g, Net carbs 6g per serving.

I use this recipe except I use stevia instead of splenda, leave out the cream and add just a touch of apple cider vinigar.

It is nothing like oatmeal and am unsure why they call it that. What it really tastes like it applesauce with just a slight crunch, kind of like a macantosh apple.
