That sounds yummy...the pesto...I don't have Aldi's...is that just a jar pesto??

It is! This brand is Priano Pesto Rosso. It shows up in a google search if you want to see what it looks like.

Care to post a recipe? that sounds good, I love celery root. Make an easy soup sometimes cooking cubed celery root (first sauteed in butter), topped with sour cream.

- I did "take 2" on a grass-fed small London Broil steak. I tried broiling the first one and it was so tough could hardly eat it (I know, should have marinated first but out of vinegar and lemons). So the second try I put the steak in a baking dish with some water to almost cover, butter, celery and carrots and SLOW cooked it -- came out very tender and tasted wonderful!

My "go to" dinner is a stir-fry, but it varies a lot. I usually have various odds and ends of veggies around - I chop them up in a big mound, and then saute them in coconut oil and butter. Usually I'll toss in a handful of cashews or peanuts or slivered almonds or pecans. Then bits and bobs of some sort of meat, or if lacking meal I'll crack open and toss in a couple eggs and stir-fry them with it. Sprinkle with some tamari sauce. Then I'll either have it with some shredded cheese, or mix in some peanut or almost butter.

It's yummy every time and I never get tired of it. Very filling too, who would ever need rice with it?

But tonight is my last night of vacation, and all the food in the house is used up, so I went out to eat. Lobster roll (didn't eat the bun) and a side garden salad, and then some freshly picked blueberries with whipped cream. I guess the whipped cream had a little sugar though it wasn't very sweet, but heck, it's my last night of vacation - heading back to the real world now after weeks away from home.

oooh, i love the inside of a lobster roll- hope it was a great vacation!

The last few days were rough around here- i accidentally took a double dose of a very powerful med, which completely messed up my electrolytes:

night one- chicken broth with bell pepper and green beans and 2 eggs beaten in (to get sodium and fluids)

night two- tub of cottage cheese (sodium!)

last night- samrabled eggs with an ounce of cheese and peppers and onions

Planning to do "Beef Stroganoff"

ground beef/ground bison
mushrooms
butter
onion flakes
garlic
"No Salt" spice
black pepper
sour cream

Brown all in pan except sour cream), then add sour cream. serve over "cabbage noodles" (I like my "noodles" thin-cut and microwaved 'til translucent, then melt butter over, stir and sprinkle w salt)

was working all night- so had a protein bar and a greek yogurt when i got home around 10.

I went to Five Guys for the first time yesterday. Bunless double bacon cheeseburger with mayo, lettuce, tomato. I had a few fries, but not until after I finished my burger.
