Glad you had a successful start in FL, sounds like you may have lost some of that swelling quickly. If you have been following the Wheat Belly Facebook page, there have been many success stories posted the past few months and some lose edema just by dropping wheat and any gluten grains.

Start checking out the LC and Paleo recipe sites, the one right here is good. It is indexed, so you click on the name and go right to the recipe post. There are substitute thickeners like xanthum gum or arrowroot for gravies. I found many LC and Paleo cookbooks in our library. Have you tried the DeepDishPizza?
