Mine is my garlic press. I love it, I use it everyday. I add garlic to just about everything, eggs, meatloaf, sauces... Also, what appliance do you have no need for since going LC. I just put my toaster and the bread maker in storage.

I do love my garlic press, and my spice grinder, and my crockpot. I don't use my waffle iron anymore, or my toaster for that matter.

As simple as it sounds, my 2 cutting boards with chopping knife. I have a large and small cutting board depending on what I need and a great sharp knife. I use them at least 2 times every single day whether it's cutting up veggies or meats.

Food processor- to grind up cauliflower to a fine consistency for some kick butt cauli mash that has practically the same texture as mashed potatoes. I also use it to grind pork rinds to make LC waffles.

I have the PERFECT pan - it is square, a nice heavy weight, and just the perfect size for making an omelet or a single burger. I think it's only about 7", a Cook's Essential brand I'm not even sure they sell anymore. You'd have to pry it from my cold, dead fingers to get it from me!!!

I love my Microplane grater!

Oh, and I like the little basket I have for grilling vegetables/fish on the BBQ.

Well, I can't believe I am talking gadgets. I wasn't a cook before LC not really, mostly boiled spaghetti and threw some sauce on it or made rice with a hamburger concoction. Now, I am enjoying cooking and creating new recipes.

What is a microplane grater?

I have so much to learn. WOOOOOOOOOOO HOOOOOOOOOO

It's a fantastic little tool for grating things like lemon or lime rind (the 'zest') and it's excellent for grating real asiago/parmesan cheese. Makes the shredded cheese look near-perfect - almost 'angel hair' like.

This is the one I have:

http://www.amazon.com/Microplane-35...pd_bxgy_k_img_c

I got mine at Bed, Bath and Beyond. Apparently - you can grate your own spices with it too - can you imagine?

With the fine Microplane grater as pictured above - I can now include recipes that ask for 'lemon zest' or 'fresh grated lime zest' - that kind of thing. The standard box-type typical grater doesn't have a section that's good for the really fine stuff.

No excuse not to make cilantro/lime/garlic marinade for grilled halibut steaks (freshly grated lime zest) or Greek marinated lemon chicken (lemon zest) now.

A good knife is definitely the most important thing I have in the kitchen, in at a close second is my favorite frying pan.

I just bought an Immersion Blender, specifically for mashing Cauliflower. I absolutely love it! It makes mashed Cauliflower as smooth as mashed Potatoes, in no time I am going to use it for mashing Butternut Squash, too. I always make mashed Rutabaga, but with this type of blender it should give me a smoother/creamier consistency instead of the slightly lumpy I get with a hand held mixer. I will use it regularly.

Oooh I'm intrigued. Tell me more! Where did you buy it? I have to grind the cauliflower forever in my food processor to get it just right.
