Default Duck Fat

So now after Nancy's thread on goose fat I have been on a quest to find duck fat locally since I am having the worst craving for duck confit.

In NYC it was no problem finding duck fat but in CA everyone seems to think I am sick. Whole Foods actually told me duck fat is called foie gras! I corrected him but he didn't seem to care.

Any idea who might sell duck fat locally? I need 4 cups of rendered fat and honestly don't trust ordering something like that online.

You could try ordering that from Nancy but I think she'd want an awful lot of money to part with her duck fat.

I've never seen it sold, and only get it when I cook duck.

No kidding. I have yet to find duck for sale in Colorado. I can get Goose at Walmart but it is wicked expensive.

Goose? Seriously?? OK I'm going to search when I'm there late this coming week. I honestly thought that beef, pork, chicken, turkey, and fish/seafood were the only things there.

Duck is tough to find here except for Thanksgiving through Christmas. I can find it occasionally.

You know, I was in Wally World a little while ago and noted that Tyson had managed to inject water even into Chicken Wings. Only they called it Chicken Stock, which I'm guessing means water + salt + sugar. Can you imagine 12% chicken stock by weight in wings? Holy schmoly!

Yeah...WallyWorld in Fountain carries Schiltz Goose.

Oooo! I just checked their website and they sell rendered goose fat!

Best place to find duck fat is on the duck! That's where mine comes from. It's extremely expensive if you try to buy it.

I asked my local supermarket to order ducks (frozen) for me. Try and see if they'll do it for you.

Whole foods sells duck. Also there are a lot of Asian grocery stores around here like 99 ranch that carry duck year round and it isnt too expensive. I love duck!

If you have a chinese restaurant near you that serves duck you might be able to ask them if they know a local place to purchase duck from or maybe you can buy a whole duck or 2 from them.

I actually found a market around here that sells fresh rendered duck fat but they are out of stock and I am not about to drive to a duck farm in stockton to get some so I have decided to make my own.

I will purchase a few ducks, render all the fat... but then what do I do with skinless duck duck meat?

I suppose I can make duck quesedillas out of it. Any other ideas?

In a word, confit. Especially when you note the last line:
the duck fat can be strained, cooled and re-used. Perfect circular culinary logic!

You're in the SF Bay Area, why not try China Town...

I'm currently in China. Just yesterday, I enjoyed Duck Fat, freshly trimmed from a duck prepared "Peking Duck" style... They sliced the duck fat off of the meat and served it in a dish. Then they served these little wraps, simliar to a tortilla wrap. There was a small dish with a dark brown flour sauce and some thinly sliced Chinese onions. Put the duck fat (skin), then chinese onions and some sauce on the wrap, fold it and eat... It was very good.

That one duck was flame cooked, then they made 4 different dishes out of it, of which the fat was one of them... It was good enough to satisfy any kind of duck craving... Good luck finding your duck fat....
