I figured these out! I again doubled the recipe, used a heaping 1/2 cup of almond flour, added a bit more cream of tarter and baking powder and used 3/4 of an egg. Worked beautifully.
I made three different cookies out of the batch - I put 1 chopped square of Lindt 85% dark choco in two of them, 1 tsp of cocoa in two of them, and dabbed sf strawberry jam on two of them. They look and taste delicious! Holiday cookies!!!!

ETA: I think next time I will try mixing in some lc pb in a couple of them. Not sure if anyone had suggested that.
