Can I get your pasta free lasagna recipe. I LOVE lasagna and I have been trying to come up with a way recreate it without lasagna noodles.

There's no secret!! Just choose your favourite lasagna recipe and make it the same way....layering the meat, cheese, spinach, etc...in the pan...finishing with cheese on top. The only difference is that you don't add any pasta !!Trust me, you won't miss it!

I make my own sauce using crushed tomatoes, basil, oregano, pepper, chilies and splenda....nothing fancy!

You can cut thin slices of eggplant and layer that as the noodle layer.

Sounds good Sissy!!

I made a pot of chicken veggie soup and cut up and cooked the chicken first. It does make a very big difference in the flavor of the soup when I did it like that.
I use low sodium chicken broth and add my own salt to control the level. It came out the best of all. I used carrot, onion, parsnip, turnip, parsley, dill and mushrooms.

Judy, that taco skillet looks great and I can actually get my family to eat that. :-) Thanks for posting the recipe.

Don't forget to look through our recipe thread pinned up top.... as you will find many there that you can "get" your family to eat!!

Finally got to the grocery this morning so I can be better prepared for the next few nights at work

I've got a pot of beef stew simmering on the stove now. I buy a sirloin roast and cut it up into cubes myself. The stuff they package as "stew meat" is just YUCK! Then I add a couple jars of stewed tomatoes, some frozen mixed veggies (peas, carrots, green beans, lima beans and corn) and some seasonings. It's P2 friendly and really All J has to do tonight is warm up some dinner rolls to go along with it for him and the kids. Quick and easy, he likes that I'll take a bowl of it to work with me and pair it up with a simple salad.

Question....
Anybody know of a light bleu cheese dresing that actually tastes good? I never liked bleu cheese before, but tried it again recently and now it's my dressing of the moment. Only thing is, it's pretty high in calories/fat and the couple of light versions I have tried (Litehouse and one other that I can't remember, but would recognize the jar) ended up in the trash. Any suggestions would be great. Thanks!

Its funny you said that, because just the other day I was planning to do just that. That will be apart of my weekend cooking session. Along with some type of soup. Possibly split pea, who knows. Thanks

Default Whatch cookin today?

Today I'm doinga small lamb roast which I marinate in olive oil, garlic, rosemary, thyme all night. Also am tweaking a recipe I saw on a network. I'm using yellow squash sliced very thin on a mandolin arranged on a
plate in a circle sprinkle w little olive oil, leeks if you have it or you can use
a little onion, then a little lemon over that and a small amt of ricotta cheese
dropped in pieces. Sounds different! Also saw a recipe yesterday on this forum
(the one which had the cheese balls) took a look and found a 3 minute cake
which I tried fro breakfast this morning and I must say it was darn good. Ate half because my breakfast was late. Its the one done in the pyrex dish.
I used the sour cream to replace the butter and another suggestion was you
could use PB also.

Hi Sissy!

I had a great dinner last night. I had a marinated salmon fillet and I cut up a big zucchini and sauteed it in EVOO, crushed red pepper and lots of chopped garlic...with portabella mushrooms and a plum tomato.

I ate most of it and saved some to put into an omelet for lunch today. I love my leftovers!!

What do you marinate your salmon in Judy? I really want to try eating more fish, but so far anything I've tried, I haven't liked.

It was a tomato mesquitte thing.....and I seasoned it also. I kind focus my meals on the flavors of my veggies....I'm not a huge fan of fish but force myself to like it cuz I know its good for me.

I've also used a honey dijon marinade that was really delish!!
Fajita seaosning on salmon with fajita veggies is another favorite of mine.

Judy all that sounds wonderful. I like to season my food and make so I have left overs. I love portabella mushrooms and usually grill them w a little evoo.
I will use that squash in my eggs tomorrow w mushrooms.Yummy!I use a lot of garlic and fresh herbs which I grow in my aerogarden under lights. Right now I have tons of basil different varieties. I do make pesto with most of it
and fresh tomato sauce w the rest
