T-man, I find it in the baking aisle with canned pie mixes. It's usually next to that pumpkin filling that you don't want. I've seen ED Smith brand and Stokely's. It should be easy to find this time of year - my local discount store sells it cheap every fall. HTH.

This is where I find mine too, T. Just be careful to read the labels because the pie-filling is right beside the plain in my supermarket. It's easy to grab the wrong one.

Only 4g sugar per 1/2 cup T-man. And look at all that fiber! It's really good for you!

eta:
I looked everywhere in 2 stores for it this week. NOTHING. Grr.
Guess I am going to have to break down and try *gasp* Wal-mart. Ugh.

Me too - I had assumed it was as high as other winter squash. Then someone pointed out that it was on the induction veggie list. Right on! It became an instant staple in my pantry.

Mmm... that sounds yummy... i'm definately going to try it

Anything used to make a dessert in a can is going to be with the fruit. Consider the lovely canned tomato (a fruit), always stuck with the veg...or the canned artichoke (a flower), also in the veg...there's more, but you get the idea.

i've used other brands of pumpkin, but i prefer libby's, it's smoother. when i used a different brand to make beefy mushroom soup, the soup was grainy. when i used libby's, it wasn't.

I must agree...I used Kroger's and thought I was eating sand the whole time...gritty!

P.S. Because of the impending holiday season, just thought I'd mention that the big can of Libby's was $1.79 at WalMart...a real bargain, so I'm hoarding it like a maniac!

2 tsps pumpkin pie spice
3 eggs
1/3 cup oil
1 cup 100%pure pumpkin
1/2 cup chopped walnuts
1/2 cup water

Makes 12 muffins

Mix dry ingredients together, mix wet ingredients, then combine them and let sit 5 minutes, stir again and fill your pam sprayed muffin tins 3/4 full.
I baked on 350 for 40 mins.
