I am quite an imaginative cook and thought I had a lot of good low carb ideas...then I found this forum! I will make 'rice' tomight.

My modest contribution is 'cabbage pasta'. I use very very finely sliced white caggage (UK term? I mean the very hard tightly packed cabbage, like a white hard ball) I boil it in a very little water with a bit of butter and pepper. Spaghetti!!! It goes very well with all sorts of sauces.

I haven't got the family on to it, but it means my meal is almost the same as theirs.

Default Finally tried it...

I hate cauliflower. I can't say that enough. It's an evil vegetable. One of those that your mom forces you to eat as a kid.

However, my love of sushi convinced me to try it for the rice. And it worked so well, I tried Karen's fried rice recipe last night. Used diced ham for the meat. It was SO awesome! Thank you Karen!

Default I hate Cauliflower too!

Cauliflower was always one of my least favourite vegetables, that and Broccoli. But since I started Atkins, I had to find something else to eat rather than Meat and Cheese, since I'm not a real meat fan.

Once I saw Karen's Cauli-Flied rice recipe, it's become a staple of my diet. I've tried several variations, my favorite being curried Cauliflower or Chillied Cauliflower. Of course my new favorite is Potato Pancakes, based on Karen's Cauliflower Puree.

I'm actually a cauliflower convert as well. Love Karen's fried "rice". And it's great as a rice subsitute for maki/sushi.

I read all these different recipes and thought yuk. Then on Sunday night I cut it up into chunks, boiled it, drained it, chopped it finer. Added sauteed garlic and shallot, butter and parmesan cheese. splashed a little heavy cream on it and baked it. We loved it!! Even my husband, who is not low carbing loved it. I am psyched!! IBoiling it took out some of the harsh taste and it really reminded me of potatoes. Leslie

Default Cheesy broccoli rice

I loved the caulifried rice so much that I started experimenting. I always start the same way: saute fresh garlic in olive oil then add grated cauliflower, and stir fry for a couple minutes.

For cheesy broccoli rice, I add pieces of broccoli (you can steam then first if you like them to be more tender) to the stir-fried cauliflower "rice." Then I make a cheese sauce with cheddar cheese and cream and add that to the "rice" and broccoli. Sometimes I add some crispy bacon pieces too. Mmmm.

Hi all,
Thank you so much for the "fried" rice recipe. It is terrific and I have enough left over for tomorrow night too! I tried it with Shrimp and had to force myself not to eat the whole thing. Soooooooo yummy.

i have never been a cauliflower eater, but i tried the mock mashed potaoes last night (w/ cream, colby/jack, and butter, baked), and it was so good!! I am now gonna try all these other recipes!! i am so so happy i found this site!!

I used to eat Mashed Cauliflower with pkgd gravy all the time on WW. I loved it, but boy what a difference cheese, and bacon and oil make to this. I tried the Twice baked mashed potatoes last night, tomrrow it is Shrimp Fried Rice.

I can't wait, who needs to go out to eat anymore???

I love this place!!!!!!!!!!!!!!

Wow, I can't wait to try the potato salad!! I love potato salad, but obviously can't have it. Just one question - when you say to cook to cauliflower in the microwave until soft, are you cooking it in water or just by itself?

The pork-fried "rice" is still my favorite cauliflower recipe. But another one of my faves is simply to take a head of cauliflower, chop it into chunks, microwave in a bowl for about 8 minutes until you can really mash it, and mix with garlic, italian cheese and bacon bits. It's quite nummy.
