I think it is in how you boil the eggs, this recipe i got from kevinpa's thread is a way to boil them from Julia Child that makes them peel very easily, http://forum.lowcarber.org/showthre...lia#post6084574

I have also found if you set them in water for a few minutes before peeling that they peel easier, but as stated by Liddie, it does make a difference in how you cook them.

I run cold water over them, immediately when they are done, and peel while they are still hot. The cold water helps to not burn your hands, and they peel very easy.

Yup, I get the cold water running just as I'm turning the stove off. I fill up a large bowl of ice cold water and plunge the hot boiled eggs into the cold water.

Makes peeling a lot easier. Let them sit for a minute or two in cold water, and take them out one at a time to peel.

The trick is to take them from boiling water to ice cold as quickly as possible. I pour off the hot water, fill it with cold running water, and put a couple of ice cube trays into the water. The faster you go from hot to cold, the easier they will be to peel. Ideally, immerse the eggs in nothing but ice cubes if you have enough.

No matter what use eggs older then a week. Fresh eggs will never peel easy no matter what method you use...

I bring eggs and water to a boil. Let boil 3 minutes and turn off and let eggs sit 10-15 minutes. Drain and crack eggs. Add some cold water and let sit a few minutes. Peel away.

I put the eggs in cold water, bring to a boil, and then boil for 10 minutes. Then go from boiling to freezing water as best as possible as quickly as possible.

Use eggs that are at least a week old for hard boiling. You could put the freshest eggs under a fire hydrant and couldn't peel the shell cleanly away. Also....the reason for immersing eggs immediately into cold water after 10 minutes of boiling is to stop the gray sulfer ring that forms around the yolk.

3rding the using older eggs. The new ones just won't peel easily no matter how much you dip them in cold water afterward.

I find its much easier to peel eggs if you boil them first, otherwise they just run all over your hands!!!! ;-)

LOL funny tony

Easy way to make eggs --- put in pan, bring to boil after boil put lid on pan. Turn off fire. Let cool. You won't get the nasty grey ring this way. Don't have to freeze your hands either. You can start them in the morning getting ready for work. And then peel and make your deviled eggs when you get home.
Easy peasy.lol

Alright. I boiled a dozen eggs last night. I took one egg out of the ice water before it was fully cooled. I put it in the fridge. I let the other eggs sit a while longer. When I peeled three of the eggs this morning including the egg that was taken out early, guess what - one didn't peel easy. Guess which one. The one that had been taken out early and placed in the refrigerator.

Therefore, I conclude that placing the eggs in ice water until fully cooled makes peeling easier than simply placing them in the fridge or allowing them to sit out until cooled.
