Add in slightly less than a packet of gelatin in the usual way.
Add in some honey (1 Tbl should be enough food for the bacteria)
Let it cool to 110 or less and add the culture.
Let it ferment for 24 hours (really needs that long to get a nice tang).

Haven't had issues about it separating yet, but I've been reading Thai recipes, and the intentional boiling to separate stuck in my mind. Thanks for the info, I'll give it a shot.
Don't forget to check out the other webpage, some interesting notions about low-methoxyl pectin and calcium "water" instead of gelatin...can get a softer gentler set, if ya know what I mean
