Oops, sometimes I don't see posts as being new, not sure why. This message forum has never worked all that well for me for remembering when I last saw messages.

Cocoyo:

2 cans coconut milk heated to above 160 to kill bacteria. I never cared if it boiled, it doesn't separate. Have you had issues about it separating?

Add in slightly less than a packet of gelatin in the usual way.
Add in some honey (1 Tbl should be enough food for the bacteria)
Let it cool to 110 or less and add the culture.
Let it ferment for 24 hours (really needs that long to get a nice tang).

That's it!

Haven't had issues about it separating yet, but I've been reading Thai recipes, and the intentional boiling to separate stuck in my mind. Thanks for the info, I'll give it a shot.

Don't forget to check out the other webpage, some interesting notions about low-methoxyl pectin and calcium "water" instead of gelatin...can get a softer gentler set, if ya know what I mean

Oh yeah! I forgot about pectin. I had been avoiding it because of my SCD diet, but I'm not really following it so I could definitely try the pectin now.

Just wondering if there are any updates/improvments to this Coconut Milk yogurt recipe. I want to try it.

Very interesting, eating yogurt have so many benefits. Yogurt contributes to colon health, can boost immunity, an excellent source of protein and can lower cholesterol.
