Thumbs up Pizza - Yummy

I haven't tried this yet but it is definitely worth it. I saw it today on one of our innumerable cookery programmes here. Nowadays I just scoff at them as they are all high high carb.

However this particular demonstration of a pizza really appealed.

He carefully sliced open a chicken breast, buttered it and browned one side of it. Then turned it over and used it as the baze (pastry) for his pizza. Piled it with cheese and other stuff and stuck it in the oven. Must say it looked grrrrreaaaat when it emerged 10 minutes later.

Ideal Low Carb pizza is my verdict.

Fiona,

I , like you have been trying to find a low carb pizza...as it is my passion food. Your post got me wondering...could we just take a rather large round slice of pepperoni (summer sausage) from the deli....pile all the other stuff on top and broil it? I would think it would get crispy on the bottom...and still taste like completely pizza.

I for one, never got into the designer pizzas with chicken and gourmet foods...I'm talking basic pizza (pepperoni, cheese, tomato)....justa thought perhaps it could work...mmmmm may just have to try it.

I use President's Choice Italian sausage burgers, just pile some tomato sauce, pizza toppings and mozzarella on top.

The La Tortilla Factory low carb tortillas make a good pizza base too if you can get them.

Deirdre...where could I find those tortillas...would it be in loblaws as well? I'm in Quebec. Thanks. To me tortillas make a great thin pizza crust. Do they have whole wheat ones perhaps?

Any idea where I could find those tortillias? I looked in A&P and price choppers but no luck!

I made a pizza for lunch today - using a slice of ham for the base, pepperoni, cheese and a sprinkling of herbs and black pepper. It was far more filling than the bread based ones I am used to and just as yummy!

To all Pizza Lovers!!!!!!!

Got and tried a good pizza recipe using soy protien flour,parmesan cheese, and an egg for the crust.

1-11/2 cps soy flour
1/2 to 3/4 cp parmesan cheese
1 egg
just enough water to make a workable ball of dough

Add all ingredients,,,preheat oven to 350.
Roll out dough very thin,,put plastic wrap on it and lots of soy flour under it and roll.
Transfer to a pizza pan,
(unsprayed) Cook 10 min. Remove and add toppings ( pepperoni,mushrooms,cheese,)
Cook for another 10 min or so...till crispy and melted.
Really good,

I made pizza slices last night from a recipe I found in one of my low carb cookbooks. It uses tofu sliced up in rectangles and pan fried, then the other toppings (mozza, sauce, pepperoni, ham....) are added to the top of each and then broiled until the cheese is golden. It tasted great. (Better than the "Healthy Choice French Bread Pizza" heated in the microwave) The tofu just needs to be pressed to remove as much water as possible.

Default Pepperoni Pizza base

Funny you should say that about using pepperoni as a base. Down here in the Bahamas I am not fortunate enough to find things like soy flour. Friday nights from the time I was 10 have always been Pizza nights, and man I miss those bad! I am a pizza lover through and through. Anyhow I was hungry last night and wanted something different and I opened the fridge to peer inside and see what I could find instead of jello again. The little pepperoni slices in the pack were right there so I put them on the plate slightly overlapping each other then I took a shredded cheese (I think it was a colby/jack combo) and sprinkled it on top with a sprinkle of black pepper on top. I popped it in the microwave for about 1 1/2 min until I could see the cheese melted evenly. It was great! A little greasy from the pepperoni, but what happened is that the pepperoni in some place got a little crunchy and was still soft in other places. I just ate it up with a knife and fork! YUMMY!!

I've done the same thing guys...but...I add a little tomato sauce with garlic, oregano etc ...I just spread it oh so lightly...you need very little, and it tastes like the real thing once the pepperoni and cheese kick in! OH LA LA!

Its Friday night and Time to make me my Mock pizza again! I am going to try doing that with the tomatoe sauce and oregano, thanks for the idea!
