The absolute fave of mine and the families. . . drum roll please . . . Faux Potatoes!!!! (tweaked of course )

Makes about eight 1 cup servings

2 32 oz pkgs frozen cauliflower
4oz cream cheese
1/2 stick butter
1/4 Parmesan cheese
1/4 cup sour cream
4-8 oz shredded cheddar cheese
chopped garlic (1 tbsp or amount to your liking)
salt & pepper
lots of paprika (to taste)

PROCEDURE
Cook frozen cauliflower in boiling water.
Remove cauliflower when cooked and add the remaining ingredients except for the shredded cheddar to your empty pot and cook (while stirring) on low flame.

After all the ingredients are melted, add back the drained cauliflower and mash with a potato masher. After it's mashed put it in a casserole dish, sprinkling the shredded cheddar on top. Bake at 350 for 20 mins.

I've always been a vegetable eater and just love cauliflower. Sometimes I steam cauliflower florets in a little vegetable broth. But my favorite way to eat it is raw and cut in small pieces (crudite) and dipped into a little bit of sour cream-based dip. I also like it dilled and pickled, right from the jar. Y'all have shared some great ideas here, and I'm looking forward to trying some of your recipes.

Here's one of my favorites.

Faux Potatoes Casserole:

2 Bags Frozen Cauliflower, boiled until soft and mashed
2 TBSP butter
1 Cup Cream Cheese (This is what thickened them up I think)
3/4 Cup Sour Cream
1 lb hamburger browned, grease drained
1 chub of Jimmy Dean sausage, browned, grease drained
Onion, Garlic, Spices etc. to taste

Mix all ingredients, pour into 8x10 casserole dish sprinkle with cheese (I used Colby Cheddar)
Bake at 350 until bubbly, about 30 minutes.

Serves 6 for a full meal, or 8 if having a salad.

I love doing one-dish things and this was perfect!

I get mine frozen, cook it in the microwave and top it like a loaded potato with cheese, sour cream, butter and bacon bits. I actually puree all of this together to get loaded cali spuds. Its sooo yummy.

One of my favorites is Bleu Cheese Turkey Casserole. We just sort of throw things into a dish and mix them all up, so I'm going to guess at measurements--if it doesn't look nice and creamy when mixed, then add some more salad dressing.

About 2.5 cups of cut frozen cauliflower
About 3 cups chopped leftover turkey
About 1 cup grated cheese
About 1 cup of bleu cheese dressing (we use Litehouse brand--beats Marie's in flavor hands-down)

Sorry, I haven't done any nutrition info on it.

If you don't like bleu cheese dressing, just use mayo--it's sort of like a tuna casserole that way. We have sort of a mix-up of variations that we do with it. Sometimes we add chopped onion, sometimes green peppers, just however the mood strikes and what ingredients are on hand.

I also really, really like spinach casserole, but not everyone here does so well, and we found that using about half cauliflower instead of all the spinach made it taste a lot better to them.

i open a 10 oz bag and nuke it until its ready to eat.. put 1 oz of cream cheese, 1/4 or 1/8 cup of parmesan, 1/2 tsp minced garlic, seasoned salt, black pepper.. mix it all up.. put it back in the microwave for a minute.. pats of butter on top..

of course I dont eat the whole thing in one sitting... BUT I COULD!!

Hmm, I thought I would also add cauliflower with tomatoes and Indian spices. Everyone seems to stay with the the creamy 'potato' realm of cauliflower.

which reminds me. I make a great coconut curry chicken and I have roasted some cauli with it and eaten the sauce on the cauli and it goes yummy together.

Cauliflower is a pretty versatile food.

I grate it, then fry it in a bit of olive oil and soy sauce - fake rice at it's finest, I am literally hooked on the stuff!!!

Mmmmm. . . . that sounds GOOD! My favorite Indian dish before this WOE was Aloo Gobi (sp?). It's Indian spices with potato and cauliflower and cooked down tomatoes. I've been meaning to try to alter the recipe to include just the cauliflower but keep forgetting. I may just have to do that now! I've also used the cauliflower to replace the potatoes in Hungarian Goulash. It turned out really well.

Has anyone tried boiling the cauliflower in broth? Then mashing it up. Just wondering..Used to do this with potatoes, and it was good. Not sure how it would work with cauliflower.

Cut up cauliflower into chunks and place it in a baking dish. Place chunks of butter on top. Salt and pepper and then add tarragon. Bake at 350 for about 45 mins.
