Default Chicken Stroganoff--Family Favorite

This has been a family favorite for a long time. I have adapted the recipe to fit the LC woe. Served it tonight to my family in the altered version and they didn't notice

CHICKEN STROGANOFF

8 strips bacon diced
2# (raw) chicken in bite size pieces
1 medium onion, diced (I usually use less onion and a little onion powder)
1/4 cup water
1 tsp. chicken soup base (can use bouillon)
3 cloves garlic
1/4 tsp paprika
pepper to taste
1/2 cup heavy cream
1/2 cup sour cream

Fry bacon til crisp. Drain and save 2 TBSP drippings. Remove bacon to side as you cook chicken and onion in drippings until chicken is no longer pink. Add the water, chicken soup base, garlic, paprika, pepper, heavy cream and bacon. Simmer 10 minutes. (Add more cream or water if simmers dry). Blend in sour cream just before serving. Serves between 6 and 8

I have made the high carb version for years (thickened with flour). They still eat theirs over noodles. I thinned mine out a little more with more water and ate it as soup.

I put this recipe in fitday and i think this is pretty close. I did the servings of 8

Total: 2365
Fat: 148 1329 57%

This sounds delish! Thank you. I think I'll add a little Xanthan in to thicken it up and serve it with fauxtatoes or cauli-rice.... ooo! or maybe zoodles?!

My Daughter ate this and she's 7 and very picky. This is a KEEPER!!!

I made this last night and it was a huge hit with the family. SO had it served over noodles and my daughter and I served it over steamed cauliflower.

Can this recipe be made without the sour cream and still taste good? What can I substitute for it?

Vixen69-you could try yogurt as a substitute, sometimes people like it, but not sour cream. I sub one for the other depending on what I have at the time,but you really need to check the carb count on it. The sour cream flavour is what gives it that unique stroganoff flavour as far as I'm concerned. If you leave it out it probably wouldn't make that much difference, just wouldn't be as thick maybe???
