You know, I was thinking today as I was making one of my favorite lunches, Sandra's Creamy Tuna and Mushrooms, that it could be modified for Thanksgiving leftovers. Instead of tuna, I could use shredded leftover turkey. Here's the link to the original post with the recipe.

I thought I would let you know what I use instead of sweet potatoes. I take a can of 100% pumkin and dump it in a pan and add half a stick of butter , a dash of heavy whipping cream and splenda and cinn. It taste just like the real thing.

Thanks bgmama. I actually went out and bought the ingredients for the pumpkin cheese cake (I may make it in the next couple of days!), So I'll have an open can of pumpkin in front of me very soon. That will give me the opportunity to take a little taste and imagine the butter and cream and stuff. Cool. Thanks for the tip!

Oh, I do have one more question if someone has a suggestion. I was going to order the ThickenThin so I could make the gravy. I could not believe they wanted $15.95 for it! I don't make gravies very often and the recipe does not call for much of the stuff anyway. Can anyone think of anything else to use to thicken the gravy that is cheaper? Worst case scenario, soy flour is only 1.5 carbs per tablespoon. That level is still within reason. Even if I eat a lot, hey, it's thanksgiving-- besides, I'm not going to eat THAT much. Would the consistency of soy flour even work though? I've never used it before so I have no frame of reference for soy flour.

You guys have given me some new ideas for Thanksgiving. Thanks for the recipe ideas!! I was hoping to find a recipe for Pumpkin pie or cheesecake and now i can try it. Although around here where i live its hard to find the almond flour or flours of that kind.

But i will give it a try!!

I can't find pecan meal anywhere so I'm thinking about ordereing. That or buy myself a cheap food processor and grind it myself from whole nuts.

I'm making the pumpkin cheesecake right now. I just couldn't resist testing it out! I plugged everything in Fitday and have the numbers if anyone is interested. Not too shabby on the carbs -- this could be dangerous!

1 serving = 1/12 of pie
Cals: 196.5
Fat: 17.5 (80%)
Carbs: 4.75 (7%)
Fiber: 1.41
Effective carbs: 3.34
Protein: 5 (10%)

Oh, and I tasted a little pumpkin out of the can and tried to imagine it done up like sweet potatoes. I can TOTALLY picture it. Good call!

OMG!!!!!!!! I just finished my first slice of the pumpkin cheesecake. OMG!!!!!!! It's AWESOME!!!!!!!

I brought 1/2 of it to work to share with some LC'ing buddies (also I CAN'T have that much of this stuff in the house without eating it all!). They LOVE it-- even someone I shared it with who is not and never has been an LC'er.

Thanks for sharing that one Skyangel! I can't wait to try some of the others!!!!

Hi everyone! This thread has some great recipes and ideas in it.

I've noticed that some of the recipes are from websites and there has been no reference provided. We've had experiences with other websites using our material and we've had to contact them about it. Conversely, we've had members here copying information without giving proper credit to the website the material is from and those websites have contacted us.

So please provide a link to the recipe and not the recipe. Copyright infringement can be nasty business and it's something none of us want to get involved with.

I've helped you out by providing some links under the titles of the recipes already posted.

Please continue with these great ideas. It's wonderful to get so many good ideas and support for over the holiday season. I've seen too many people just leave LC after a Thanksgiving or Christmas debauch and that's a very sad thing to see.

Lightbulb Pumkpin Bake

Here's another recipe in the spirit of Thanksgiving. This was in another thread, it's awesome. You can add whipped cream and you think you're eating pumpkin pie.

Pumpkin Bake

8 oz cream cheese, softened
4 eggs
1/2 c. Splenda
1 1/4 c. canned pumpkin
1/2 Tb. pumpkin pie spice
1 t. cinnamon

Combine all ingredients. Pour batter into a glass baking dish 13" x 9" that has been sprayed with nonstick spray. Bake in a 350 oven until center is done - it will look 'puffed', but will shrink down as it cools. Makes 4 large servings w/ approx. 6 carbs per serving.

This one I am dying to try, out of Atkins Cookbook.

Almond Stuffing
6 1/2-cup servings

1/2 cup butter
1/2 cup finely chopped onion
1/4 pound smoked ham, chopped fine
1/4 chopped parsley
1/2 teaspoon thyme
1/2 teaspoon freshly ground pepper
1/2 cup crushed pork rinds
2 eggs
1/4 cup dry red wine
2/3 cup blanched almonds


Melt butter in a large skillet. Add onions. Cooks until light brown. Add ham, parsley, and spices. Mix well. Combine mixture with pork rinds, eggs, wine and almonds.

Total Carb Grams 24.5
Carbs per serving 4.1

On the Apple Almond Turkey Dressing, the first ingredient is low carb bread. I have never bought that, haven't even been in the bread aisle since December 2001. What is a good lowcarb bread? Is there a particular brand I should look for? How many carbs is good?

Also, I've never cooked a turkey before. I am planning on making a small one, like a 12 lb, should I buy one of those cooking bag things? If there are any other tricks to making it come out I'm interested.
