Wink "tried and true" favorite recipies using Atkins bake mix

What are your favorite recipies using the bake mix. My mom gave me a can if Atkins bake mix and need help in deciding how to use it!!

well i eat it with a lil water and a lil davinci mixed up and warm...or even cold...call me crazy. i did it with splenda and cinnamon the other day too. yum

I like fried chicken and zucchini nut bread! For the fried chicken, just dip chicken in egg and then the bake mix (mixed with seasonings) and then fry it.
Here's the info on the zucchini bread-

Servings: 20
Prep time: 15 minutes
Bake/Cook time: 1 hour

Carbohydrates: 4.5 grams
Net Carbs: 3.5 grams
Fiber: 1 grams
Protein: 2.5 grams
Fat: 14.5 grams
Calories: 167

1 cup (scant ) Atkins Bake Mix
1 cup (scant) finely ground almonds
1 1/2 cups granular sugar substitute
2 teaspoons cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup canola oil
4 eggs
1 medium zucchini, coarsely grated
1 teaspoon vanilla extract
1. Heat oven to 350º F. Grease an 8x 4 loaf pan; set aside. In a large bowl whisk together Bake Mix, ground almonds, sugar substitute, cinnamon, salt, baking soda, and baking powder. In a medium bowl, mix vegetable oil, eggs, zucchini, and vanilla extract.
2. Pour zucchini mixture into bake mix mixture. Mix well. Pour batter into prepared pan. Bake 1 hour until golden brown, and a cake tester inserted in center comes out clean. Cool on wire rack before cutting into thin slices.
*also makes muffins. Simply bake off the batter in a 12-cup muffin tin for 35 to 40 minutes.

Hi! One of my favorite foods is fried chicken. Take 1/4 stick of butter and put it in a baking dish and put it in the oven until the butter melts. Mix 1/2 cup baking mix, 1 tsp paprika, 1 tsp black pepper and a little bit of salt (you can change the mixture to your liking depending on how strong you want the flavor) wet the chicken with water and heavily cover the chicken with the mixture (I use the thin breast strips) and place in the melted butter. Bake at 360ish for 10 minutes, flip and bake another 10 minutes. While this is cooking you can sautee some olive oil, butter, fresh garlic and pepper with broccoli to get a GREAT easy to make side dish. My hubby and I have this at least twice a week. You can also bread flounder and fry it if you like "fish and chips!" Happy low-carbing!

I used it to make eggplant rollatini, i found after refrigerating leftovers and then reheating, the soy in the bakemix gave off a nasty flavor.

Found recipe on atkins's site.

My mom made the Christmas Yule Log that's in the Atkins for Life book. It was sooooo good, everybody raved about it and couldn't believe it was LC. It does have a bittersweet chocolate frosting so if you're not into the "dark" chocolate flavor then I'd advise adding splenda or something to make that part a bit sweeter, but I loved it. I only wish there were more folks replying to this with more sweets made from it. That's been hard for me to find too. I click on recipes but it's hit/miss to find stuff made with the mix. I have a bunch of cookbooks but they require so many "weird" ingredients that I don't have around that I need to start experimenting with my old recipes and the mix more. Annie

Here's another..

~Stacy's Blueberry Walnut Muffins~

You need: 3/4 C. Atkins flour/Mix, 3/4 C. whole wheat flour, 1/2 C. rolled oates, 1 TBS. baking powder,
1/2 C. splenda, 1 TSP. cinnamon, 1 egg lightly beaten, 1/2 TSP. grated orange peel, 1 C. Sugar Free Tang{liquid}, 1/2 C. applesauce{Lucky leaf/sweetened with splenda}, 1/2 C. blueberries, and 1/2 C. chopped walnuts.

Preheat oven to 375'
Spray muffin pan with cooking spray.

Combine flour, whole wheat flour, oats, baking powder, splenda and cinnamon in a large bowl; mix well.
Make a well in center.

Beat egg, orange peel, Tang, and apple sauce in a small bowl with a spoon until combined.
ADD to flour mixture.
Mix just until moistened.
Fold in blueberries and walnuts.

Fill muffin cups 3/4 full.
Bake until golden..20 minutes or less, as all ovens vary.


Changes:
You can also use 1/2 C. sweetened dried cranberries instead of blueberries.
Can also use toasted almonds instead of walnuts.

For the lucky leaf applesauce w/splenda, I can only find it right now in the pkg. with indiv. serving cups..Haven't found it in jar form yet.

Hi, i was reading your posts about Atkins bake mix. How do you make tortillas? Could you post that for me plz? I can't find low carb tortillas in my area, and it would open up so many lunch, and dinner possibliites. Thanks.

French Toast Crepes

They taste like really decadent French Toast.

2 eggs
dash salt
1 T. Atkins bake mix
1 T. SF vanilla syrup
dash cinnamon
1/4 cup heavy cream

Beat all together and cook 1/4 cup of mixture in a non-stick skillet as you would for crepes. When they are done and just barley warm, place a heaping tablespoon of whipped cream in the center of each crepe, roll and eat.

Makes about 4

That 1/4 Cup heavy cream, is that beaten into the batter or is that whipped and then rolled into the rest at serving? Hard to tell....

Sorry, it's beaten into the batter. You will have to whip some extra cream for a filling. Mascarpone cheese sweetened with a little Splenda is a really good filling to.
