I've never heard of peanut butter sold with the bacon already mixed in, but I don't doubt it existed. Maybe that was during the era of the bacon bits craze (there's something for a cultural historian to pursue).

Pecans and mozzarella sounds just weird enough to be delicious!

Today for lunch we had pork rind nachos. Melted cheese over pork rinds and topped with a few jalapenos and some green enchilada sauce my husband made. It was actually really good... but weird.

hmmm - don't know if this is too weird, but here goes:
cream cheese, chunky natural peanut butter - mix and spread over strawberries

I also find I don't eat traditional meals - like cheeseburger quishe for b-fast or faux french toast for dinner.

Tonight I did an experiment with the japanese yam noodles...instead of cooking them oriental-style, I sautee'd beefsteak strips, zukes, spinach, with garlic and onion, added the noodles, and dressed it with pesto sauce...to my surprise it was good and the yam noodles (1 g carbs a serve) didn't do too bad as pretend pasta...they are not full of flavor and so coated with the pesto they did the trick.

Yam noodles -- I'd forgotten about those! They taste very much like rice noodles and my Chinese mother serves them cold, by the bundle, doused with some soya sauce, sesame oil, and sprinkled with chopped green onion. They're also good hot with broth. Thanks for the reminder!

You buy them in packages found in the refridgerated goods area of Asian supermarkets.

The place where I've gotten them sells them in packages that look like rice crackers or cookies - each bundle of noodles is in its own little compartment.

I bet there's such thing as yam noodle ramen!

Japanese yam (different apparently in starch to ours) noodles are also sold dried- they look like rice vermicelli noodles and are a bit chewier when cooked up due to being almost all fibre. Dr Atkins talked about them somewhere.....perhaps in his book? (Can't recall).

They are fantastic done in traditional oriental stir-fry. My package says they are 1 g carbs/serving.

...it sure is tasty!

Tuna mixed with Salsa and Cottage cheese! As long as you don't look at it too much, it's a nice treat...well, I think so anyway!

Through fixing my lunch while half asleep and some strange meal planning I ended up about 600 calories short of covering my basal metabolism after dinner was all said and done. And I needed to increase my fat grams. (Ain't it wonderful to be able to say that?? ) I still fell about 50 calories short but I came up with the strangest dessert I've ever eaten: creamed butter with cream.

Using the mixer on high cream half a stick (4 tablespoons) of butter. Add to this 3 tablespoons of heavy cream and one packet of Splenda and two drops of vanilla extract. Mix well. 560 cal and 2 carbs

Eat and marvel at the peculiar substance in your mouth.

I don't think I'll do that again.

I try to stick to the tried and true also, but ya know, some times you gotta do what you gotta do.

Besides, that answered a lot of questions I had on the idea of a fat fast.
