Default Yummy variation of Mock-a-roni & Cheese

This is a variation of the mock-a-roni and cheese recipe thats been posted on this site for a while.

Ingredients:

1pkg. firm tofu
1/4 cup Carb Options Cheddar Cheese sauce (or make your own cheese sauce)
1/2 bag frozen brocolli
1 slice LC bread (toasted until lightly burnt)
parmasean cheese

Directions:

Preheat oven to 350 degrees

Thaw brocolli in microwave (about 3 minutes) & drain out extra water

Slice up tofu into "macaroni" like pieces, squeeze out excess moisture and put in a small cassarole dish.

Add brocolli to tofu. Then gently stir in cheddar sauce (use more if you like things extra cheesy).

Chop up the burnt toast until you've got bread crumbs and dump those on top.

Next do a light sprinkling of parmesean cheese on top. Sometimes I will use shredded cheddar cheese when I'm in a very cheesey mood

Put in the oven until bubbly (about 15-20 minutes)

Default Variations on Mock-a-roni and Cheese

I LOVE the Mock-a-roni and Cheese recipe that I found here. DW and I eat it at home all the time.

Have any of you ever "doctored up" the recipe to change the flavor?

I was thinking of bringing this to our Thanksgiving lunch at work, but I'm not sure how the tofu will be recieved. I thought that if I added chopped spinach, and bacon, or broccoli and culiflower that I could make a new dish as well as win over the non-tofu eaters.

Thoughts?

Hi. I moved this onto the old thread, since there are some good ideas there. Tuna noodle casserole and tomato and ground beef are among them. Mentioned in the first post are cauliflower with mustard, and ham with fried onions.

Had this tonight and I enjoyed it!! I think I will add some sour cream next time to give it a little more "creamy" texture to it. The tofu was GREAT in this though, and this is the first time I made something with tofu that I enjoyed LOL.

WOW. I can't believe how much like the real thing this tastes! I was very skeptical, as was my tofu-hating BF, because honestly, tofu is NOT pasta. Also, I could tell from just reading the recipe that eggs would not give me the results I was looking for. So, I cut my well-drained, extra firm tofu into little strips and tossed it with cheese sauce (my own recipe, which I posted on the Soups,Sauces forum as Mock bechamel-style cheese sauce), plus some extra cheddar cheese, and topped it with some parmesan to make a "crust", then baked it for around 30 mins. I was SHOCKED. It really truly tasted like a slightly overcooked version (because tofu is softer than pasta) of my mother's homemade mac n cheese. Amazing. Even BF, who is extremely picky, hates tofu and doesn't particularly like real mac n cheese, was amazed!!!!! I highly recommend you try it - and if your mom used to make a flour/butter/milk/cheese sauce, try the sauce recipe I posted in the other forum - it is so similar it's amazing!!!!!!!!!!!

Just needing to BUMP this one up, it's the best and easiest casserole ever. I've really missed mac & cheese and this is good.

Made this again this week, added 1 cup of canned tomatoes (i'm in the pre-maintenance phase) and it was incredible!

this may sound crazy, but has anyone found anything besides tofu that works? I am avoiding soy due to hypothyroid...

Hysteria, I'm hypothyroid as well. I usually stay well away form tofu and other soy products, but tried this one anyway. Well worth it, I won't make it often, but every couple of months should be okay.

I've also started using virging Coconut Oil in my diet and on my last blood test 3 months ago, my levels were actually high. There's a couple of threads on here about the CO effects on thyroid, seemed to work for me.

I tried this and could not get passed the consistency of the tofu...... It looked good coming out of the oven though.

It was really good. I only put one egg in.
The best part is I've been using it to sub for an 1 egg in my usual 2 egg breakfast scramble.

Oh, baby, I'm in cheese HEAVEN! Just made this pretty much according to the orig recipe (not really measuring, though) and it is AMAZINGGGGGG! The tofu mashed beautifully, and I don't feel like I'm missing a thing from mac and cheese! Now, if I could just stop eating it...
