where in the heck are you people buying this tofu from??!! lol,can i get it at super walmart or krogers? or do i have to go to some kind of health food store,i have never eatten the stuff, wouldnt know it if i seen it Tammy

Tammy,
You should be able to find Tofu in the dairy and/or produce dept. of your grocery stores. It comes in block form. Kinda looks like a block of semi soft white cheese surrounded by liquid. As described above, it comes in varying degress of firmness. By the extra firm,plain unflavored and unsweetend, to make this recipe. It really replicates the texture and flavor, or lack of, of elbow macaroni when cut in small cubes (1/4 - 1/2 inch). Don't let that description turn you off though. I'm finding it a very versitile and inexpensive protein source. Keep watching for recipes because I think there's more to come. Good Luck!

I used fried ground hamburger with some onion tonight. Just added this to the original recipe. Oh yes, a couple of tomatoes from the garden chopped up. (It's a major challenge figuring out how to use these tomatoes as they ripen!)

I finally made this using a can of tuna (kind of a tuna noodle casserole thingy). I only used one egg, though and added about a 1/4 c. of cream of mushroom soup (the one I had was 6 g. carbs in 1/4 c.). Instead of garlic and salt, I just used 1/4 tsp. of garlic salt. The rest of the ingredients remained the same. We were very satisfied with the results.

I tried a version of this last night using the tofu and the bottled ragu cheese sauce. I was hesitant to try the entire recipies, b/c I've never had tofu, however it was like having real mac n cheese!!!!! I'm going to try the recipie in it's entireity next time. I second the suggestion of cutting the tofu brink into ribbons. Much more realistic.

Here are some ideas for using silken tofu.

Tofu Tahiini Dressing
1 c. water
1 8oz cake tofu
1/4 c tahini
1 clove garlic diced
1 Tbsp tamari or Braggs Liquid Aminos
1Tbsp onion, diced
1 Tbsp lemon Juice
1/4tsp caraway seeds
1/4tsp dill weed
1/4tsp garlic powder
Combine all ingredients in a blender and blend at high speed for about a minute, until smooth. Add more water if needed. Chill and serve. Makes 2 1/2 cups or 10 1/4 c servings. 1/4 c =54 cal, .78 gms carb.

Mock Blue Cheese Dressing
8oz soft tofu
1/2 c veggie stock
2 cloves chopped garlic
2 Tbsp mustard
1 Tbsp red vinegar
1 Tbsp nutritional yeast
1 Tbsp Braggs or tamari
1 Tbsp basil
1 Tbsp oregono
1 Tbsp splenda
Blend all ingredients and chill. Thin with water if needed. 2 Tbsp=6.7cal,.125 gms carb.

These are made with 0 carb tofu. the carb count would be higher with higher carb tofu. The second one is especially good made with fresh herbs. Enjoy!

OMG this tastes JUST like mac & cheese to me! i'm saved! WOOO HOOOOOO!

i used 1 egg, a tad bit more cream, and maybe a tablespoon at the most of canola oil. not the slightest bit dry. i've never eaten tofu before and was pretty hesitant at first.

this is great! what else can i slap on some tofu? does it come in chocolate flavour?

Does anyone know what I could substitute for tofu?

I hate tofu (gag, barf, bleuch!).

Tastes like wet bandages to me but don't ask me how I know what "they" taste like. LOL

I couldnt believe how it actually had a "pasta" taste to it!! Yummm!!

I mashed it up and it tasted good, but maybe next time Ill cut it up differently.. and no eggs lol

Ahhh...comfort food at last!! This was the first time I've used tofu as a base for a recipe and it is awesome! I may try making it my old fashioned way next time (start by making a rue) and see how it turns out. I'll let you know!

Talking I tried the "moc" mac and cheese and it was incredible

Tonight I made it with steak and some veggies. It was the best lc dish I have ever made. I couldn't believe tofu could taste so much like Mac and Cheese. It had the texture of homemade mac and cheese. I even had a non lc friend over and he liked it alot. It is really lowcarb too since the tofu is low and the only other ingredients are cheese, cream (just a little), and two eggs.

I give it two big thumbs up!
